Air Fryer Healthy Turkey Meatballs

These healthy air fryer turkey meatballs are crispy on the outside, juicy on the inside, and packed with lean PROTEIN and sneaky veggies. Made without breadcrumbs, they’re GLUTEN-FREE and come together fast with simple ingredients. Perfect for meal prep, family dinners, or a protein-rich snack!

Ingredients
  

  • 1 pound lean ground turkey 93% lean recommended
  • 1 small zucchini finely grated and squeezed dry
  • ½ small onion finely chopped or grated
  • 1 large egg
  • ¼ cup rolled oats or almond flour for low-carb
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill or green onion optional
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray for air fryer basket

Instructions
 

  1. Grate the zucchini and use a clean towel or paper towel to squeeze out moisture. Finely chop or grate the onion.
  2. In a large bowl, mix ground turkey, zucchini, onion, egg, oats, herbs, Dijon mustard, garlic powder, salt, and pepper. Stir just until combined.
  3. Form into 1½-inch meatballs (about 16–18) using clean hands or a cookie scoop.
  4. Preheat air fryer to 375°F (190°C) for 3–5 minutes.
  5. Lightly spray the air fryer basket. Arrange meatballs in a single layer. Air fry for 10–12 minutes, shaking the basket halfway, until golden brown and cooked through (internal temp 165°F/74°C).
  6. Serve warm with your favorite sauce or sides, or store for meal prep.

Notes

  • Don’t SKIP squeezing the zucchini to avoid soggy meatballs.
  • Use almond flour for a grain-free version.
  • Freeze cooked meatballs for up to 2 months.
  • Reheat in air fryer, oven, or microwave.
