Creamy High Protein Cashew Dip

Ingredients
  

  • 1 cup raw cashews soaked in hot water for 15 minutes
  • ½ cup unsweetened soy milk or water
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt or to taste
  • 1 scoop unflavored protein powder optional, for extra protein

Instructions
 

  1. Place the cashews in a heatproof bowl, cover with hot water, and SOAK for 15 minutes. Drain well.
  2. In a high-speed blender, combine the soaked cashews, soy milk, nutritional yeast, lemon juice, apple cider vinegar, garlic powder, smoked paprika, and salt. Blend until smooth.
  3. If using protein powder, add it now and blend again until fully incorporated. Adjust liquid if needed for your desired consistency.
  4. Taste and adjust the flavor, more lemon juice, salt, or nutritional yeast depending on your preference.
  5. Transfer the dip to a bowl or jar and serve warm, chilled, or at room temp with your favorite dippers.

Notes

  • If you forget to soak your cashews, a quick boil for 10 minutes can also work in a pinch.
  • To make this nut-free, try using raw sunflower seeds, the texture is slightly different, but still tasty.
  • Want it spicy? Add a pinch of cayenne or a few dashes of hot sauce before blending.
  • If it thickens in the fridge, stir in a bit of water or soy milk to loosen it up.
