Ingredients
- 1 cup raw cashews soaked in hot water for 15 minutes
- ½ cup unsweetened soy milk or water
- 2 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 1 teaspoon apple cider vinegar
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt or to taste
- 1 scoop unflavored protein powder optional, for extra protein
Instructions
- Place the cashews in a heatproof bowl, cover with hot water, and SOAK for 15 minutes. Drain well.
- In a high-speed blender, combine the soaked cashews, soy milk, nutritional yeast, lemon juice, apple cider vinegar, garlic powder, smoked paprika, and salt. Blend until smooth.
- If using protein powder, add it now and blend again until fully incorporated. Adjust liquid if needed for your desired consistency.
- Taste and adjust the flavor, more lemon juice, salt, or nutritional yeast depending on your preference.
- Transfer the dip to a bowl or jar and serve warm, chilled, or at room temp with your favorite dippers.
Notes
- If you forget to soak your cashews, a quick boil for 10 minutes can also work in a pinch.
- To make this nut-free, try using raw sunflower seeds, the texture is slightly different, but still tasty.
- Want it spicy? Add a pinch of cayenne or a few dashes of hot sauce before blending.
- If it thickens in the fridge, stir in a bit of water or soy milk to loosen it up.
