Creamy Potato Soup with Bacon

Ingredients
  

  • 6 slices bacon chopped
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 4 cups russet potatoes peeled and diced (about 4 medium)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 3 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese plus more for topping
  • Salt and black pepper to taste
  • Green onions or chives chopped (for garnish)

Instructions
 

  1. Cook the bacon: In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  2. Sauté the onion and garlic: Add diced onion and cook until soft and translucent, about 3–4 minutes. Stir in the garlic and cook for another 30 seconds.
  3. Make the roux: Melt the butter in the pot, then sprinkle in the flour. Stir for about 1 minute until a smooth paste forms.
  4. Add broth and potatoes: Gradually whisk in the chicken broth, then add the diced potatoes. Bring to a boil, reduce heat, and simmer until potatoes are tender, about 12–15 minutes.
  5. Blend partially: Use an immersion blender to puree about half the soup for a creamy texture while keeping some potato chunks intact.
  6. Add milk, cream, and cheese: Stir in the milk, heavy cream, and cheddar. Heat gently until the cheese melts and the soup thickens. Season with salt and pepper to taste.
  7. Serve: Ladle into bowls, then top with crispy bacon, extra cheddar, and a sprinkle of green onions or chives.

Notes

  • Blend only half the soup, it keeps that creamy texture but still gives you those hearty chunks!
  • If the soup thickens as it cools, just stir in a splash of milk or broth to loosen it up.
  • Always shred your own cheese! It melts smoother and tastes so much better.
