PREP: 5 minutes
COOK: 12 minutes
Cooling Time 15 minutes
TOTAL: 32 minutes
Course: Condiment

Ingredients

  • 2 cups fresh cranberries frozen works too, no need to thaw
  • cup 100% pure pomegranate juice unsweetened if possible
  • cup honey plus more to taste

Instructions

  1. Add the cranberries, pomegranate juice, and honey to a small saucepan. Stir to coat, then let it sit for about 5 minutes.
  2. Place the saucepan over medium heat and bring to a gentle boil. You’ll hear the cranberries start to pop, stir occasionally.
  3. Reduce the heat and let it simmer for 10 to 12 minutes. Use a spoon or potato masher to gently mash the cranberries as they soften.
  4. Once the mixture looks thick and glossy, remove it from the heat. Let cool for 15 to 20 minutes, it will thicken more as it cools.
  5. Transfer to a clean jar and store in the fridge for up to 10 days.

Notes

  • You can use fresh or frozen cranberries.
  • The jam thickens as it cools, so don’t worry if it looks a little loose at first.
  • Taste at the end and add a bit more honey if you like it sweeter.
  • Store in the fridge for up to 10 days in a sealed jar.
