Ingredients
- 1 cup low-fat cottage cheese
- 2 large eggs
- ⅓ cup maple syrup or honey
- 1 teaspoon vanilla extract
- ¼ cup melted coconut oil or neutral oil
- ½ cup unsweetened cocoa powder
- ⅓ cup chocolate protein powder plant-based or whey
- ½ cup oat flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup mini chocolate chips plus more for topping
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a blender or food processor, blend the cottage cheese, eggs, maple syrup, vanilla, and melted oil until smooth.
- Pour the blended mixture into a bowl and stir in the cocoa powder, protein powder, oat flour, baking powder, and salt. Mix until just combined.
- Fold in the chocolate chips.
- Spread the batter evenly into the prepared pan and sprinkle extra chocolate chips on top.
- Bake for 20–25 minutes, or until the center is set and a toothpick comes out with moist crumbs.
- Let cool completely before slicing. For extra clean cuts, chill in the fridge before slicing.
