High Protein Chocolate Banana Bread (with Cottage Cheese)

This rich, fudgy chocolate banana bread is made with blended cottage cheese and protein powder for a healthy, high-protein twist. No oil, no butter, just soft, moist texture and deep chocolate-banana flavor in every bite.

Ingredients
  

  • 1 cup cottage cheese
  • 2 large ripe bananas mashed
  • 2 large eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • ¾ cup oat flour or almond flour for low-carb
  • ¼ cup unsweetened cocoa powder
  • ¼ cup vanilla protein powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp ground cinnamon (Optional)
  • 1 extra banana sliced lengthwise, for topping

Instructions
 

  1. Preheat oven to 175°C (350°F) and line a loaf pan with parchment paper or lightly grease it.
  2. In a blender, blend cottage cheese, mashed bananas, eggs, maple syrup, and vanilla until smooth.
  3. Pour mixture into a bowl and stir in oat flour, cocoa powder, protein powder, baking soda, baking powder, salt, and cinnamon. Mix just until combined.
  4. Pour batter into the prepared pan. Top with the sliced banana, cut side up.
  5. Bake for 45–55 minutes, or until a toothpick comes out with just a few moist crumbs.
  6. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Blend cottage cheese fully for best texture, no lumps!
  • Use very ripe bananas for natural sweetness and softness.
  • For a lower carb option, use almond flour and a sugar-free sweetener.
  • Let the loaf cool completely before slicing for clean, even pieces.
  • Add-ins like chocolate chips or walnuts are optional, avoid topping them to keep the loaf looking smooth and clean.
