Ingredients
- 1 cup cottage cheese
- 2 large ripe bananas mashed
- 2 large eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- ¾ cup oat flour or almond flour for low-carb
- ¼ cup unsweetened cocoa powder
- ¼ cup vanilla protein powder
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ¼ tsp ground cinnamon (Optional)
- 1 extra banana sliced lengthwise, for topping
Instructions
- Preheat oven to 175°C (350°F) and line a loaf pan with parchment paper or lightly grease it.
- In a blender, blend cottage cheese, mashed bananas, eggs, maple syrup, and vanilla until smooth.
- Pour mixture into a bowl and stir in oat flour, cocoa powder, protein powder, baking soda, baking powder, salt, and cinnamon. Mix just until combined.
- Pour batter into the prepared pan. Top with the sliced banana, cut side up.
- Bake for 45–55 minutes, or until a toothpick comes out with just a few moist crumbs.
- Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

- Blend cottage cheese fully for best texture, no lumps!
- Use very ripe bananas for natural sweetness and softness.
- For a lower carb option, use almond flour and a sugar-free sweetener.
- Let the loaf cool completely before slicing for clean, even pieces.
