Ingredients
- 1 cup raw cashews
- 1 cup Medjool dates pitted
- ½ cup dried cranberries
- 1 teaspoon pure vanilla extract
Instructions
- Add the cashews to a food processor and pulse until broken down into a coarse meal.
- Add the pitted dates, dried cranberries, and vanilla extract. Blend until the mixture forms a sticky dough that holds together when pressed.
- If the dough feels dry or crumbly, add one extra date or 1 teaspoon of warm water and blend again.
- Scoop out 1 tablespoon at a time and roll into balls. Dampen your hands slightly if the mixture sticks.
- Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
Notes
- If your dates are dry, soak them in warm water for 10 minutes, then drain well.
- The dough should be soft and sticky but not wet. Add water 1 teaspoon at a time if needed.
- Use raw, unsalted nuts for best results.
- Balls can be frozen and thawed as needed, great for make-ahead snacks!
