No-Bake Cranberry Energy Balls

These no-bake cranberry energy balls are made with just 4 simple ingredients, cashews, dates, dried cranberries, and vanilla. They’re naturally sweet, full of fiber and healthy fats, and perfect for snacking, lunchboxes, or meal prep. Quick to make, freezer-friendly, and seriously delicious!

Ingredients
  

  • 1 cup raw cashews
  • 1 cup Medjool dates pitted
  • ½ cup dried cranberries
  • 1 teaspoon pure vanilla extract

Instructions
 

  1. Add the cashews to a food processor and pulse until broken down into a coarse meal.
  2. Add the pitted dates, dried cranberries, and vanilla extract. Blend until the mixture forms a sticky dough that holds together when pressed.
  3. If the dough feels dry or crumbly, add one extra date or 1 teaspoon of warm water and blend again.
  4. Scoop out 1 tablespoon at a time and roll into balls. Dampen your hands slightly if the mixture sticks.
  5. Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.

Notes

  • If your dates are dry, soak them in warm water for 10 minutes, then drain well.
  • The dough should be soft and sticky but not wet. Add water 1 teaspoon at a time if needed.
  • Use raw, unsalted nuts for best results.
  • Balls can be frozen and thawed as needed, great for make-ahead snacks!
