Step 1:

Turn it on to 190 °C (that’s 375 °F) and get your muffin tin ready, either line it with paper cups or just grease it a little. The oven needs to be hot before the batter’s ready SO don’t skip this part! That first burst of heat helps the muffins rise properly.

Take your ice cream out of the freezer and let it sit for about 5 to 10 minutes. You want it soft enough to stir, but not melted into soup… Think: soft serve. If it’s still stubborn, just stir it around a bit with a spoon until it loosens up.

Scoop the softened ice cream into a bowl. Add your self-rising flour (or the flour + baking powder + salt combo), and toss in the cinnamon, lemon zest, and pinch of salt if you’re using them.
