25 Easy Fall Weeknight Dinner Recipes

Fall weeknights always seem to speed up on me… you’re minding your own business, one minute it’s late afternoon, then suddenly it’s dark outside, everyone’s hungry, and I’m standing in the kitchen thinking… okay, what can I make that feels cozy without turning Tuesday into a 3-hour project??

25 Cozy Fall Dinners for Easy Weeknights

That’s basically what I wanted from this list!

Like anyone, I love the big slow Sunday dinners with family once the weather cools down, but during the week I really need something a little more practical (that still has FLAVOR!!). Give me one pan, a pot of soup, a quick skillet, or something I can hand over to the slow cooker in the morning and forget about until dinner. And fall gives us so much good stuff to work with too. Pumpkin, apples, squash, sweet potatoes, mushrooms… even a regular chicken dinner starts feeling a lot more interesting once those flavors show up!

So I pulled together 25 dinners I would (and I will, haha) actually be happy to make on a chilly weeknight. Some are quick, some do most of the work by themselves, and a few will leave you very pleased when there’s enough for lunch tomorrow.

Have a look and see what sounds good tonight… I’m already eyeing that chicken and apples (#9)!

1) Fall Chicken Sheet Pan Dinner by Skinnytaste

Fall Chicken Sheet Pan Dinner

This is exactly the kind of sheet pan I want this fall! Chicken, butternut squash, Brussels sprouts, and red onion all roast together with smoked paprika, cumin, and even a little cinnamon… then feta goes over the whole thing for a quick broil at the end. One pan, dinner for four, and only about 15 minutes of actual prep. I’m listening!

2) Easy Pumpkin Chili by Budget Bytes

Easy Pumpkin Chili

If pumpkin in chili sounds suspicious, don’t worry… it doesn’t turn the pot into pumpkin spice dinner, haha. It basically disappears into the tomatoes and gives the chili a richer texture while beef, black beans, and kidney beans keep it firmly in proper dinner territory. And since canned pumpkin does all the work, you’re looking at about 10 minutes of prep before everything gets cozy in the pot.

3) Easy Shepherd’s Pie by Well Plated

Easy Shepherd's Pie

Shepherd’s pie on a weeknight sounds ambitious until you realize frozen peas and carrots are doing a good chunk of the chopping for you. Beef or lamb goes into that savory filling, mashed potatoes get spread right over the top and the oven takes care of those browned little potato peaks. If there are leftover mashed potatoes in the fridge? Even better… Tuesday just got considerably easier.

4) Slow Cooker Apple Cider Pork Bowls by The Real Food Dietitians

Slow Cooker Apple Cider Pork Bowls

This one takes planning in the morning, but only about 15 minutes of it. The pork gets rubbed with Dijon, brown sugar, garlic, paprika, and a little cinnamon before the slow cooker takes over, then you pile it onto mashed sweet potatoes with a crisp apple slaw. It makes eight hearty bowls too… which means future-you may already have tomorrow’s lunch handled.

5) Butternut Squash Gnocchi by Love and Lemons

Butternut Squash Gnocchi

No boiling the gnocchi first here, which already makes me happy on a weeknight! It roasts right on the sheet pan with butternut squash, red onion, and thyme, then kale joins near the end so the edges can get a little crispy. Finish it with creamy ricotta and that sweet-tangy apple cider dressing… and add the crispy sage if you have a few extra minutes.

6) Cozy White Bean Mushroom Stew by Minimalist Baker

Cozy White Bean Mushroom Stew

The kind of meatless dish that still feels properly hearty. Mushrooms, baby potatoes, and white beans simmer in one pot with rosemary and thyme, then a little Dijon and tamari sneak in for extra savory flavor. The broth turns creamy without needing actual cream too… definitely bring some crusty bread for this one!!

7) Creamy Pumpkin Pasta with Italian Sausage by Gimme Some Oven

Creamy Pumpkin Pasta with Italian Sausage

A whole can of pumpkin goes into this sauce, but Italian sausage, garlic, sage, and Parmesan make sure it stays VERY far away from dessert territory, haha. There’s also a splash of white wine to loosen up all those browned bits from the pan. Toss in the kale at the end and you’ve got a cozy bowl of pasta in about 45 minutes.

8) Roasted Harvest Bowls by Eating Bird Food

Roasted Harvest Bowls

This bowl has basically invited the whole fall produce section over for dinner! Maple-turmeric chicken goes with roasted butternut squash and Brussels sprouts, then crisp apple, kale, cranberries, pepitas, and goat cheese get piled in too. The apple cider vinaigrette ties everything together, and yes, there’s a lot going on here.

9) One Pan Chicken and Apples by I Heart Naptime

One Pan Chicken and Apples

Chicken and apples already feel so cozy but then bacon gets involved… and now I’m definitely interested!! The sweet potatoes and broccoli cook in a little of that bacon fat before tart apples, thyme, and cinnamon join the pan. Best part? The whole thing takes about 35 minutes, including prep.

10) Pumpkin Chicken Soup by Haute & Healthy Living

Pumpkin Chicken Soup

Here’s one for the nights when even 45 minutes sounds ambitious. Rotisserie or leftover chicken keeps things moving, while canned pumpkin, coconut milk, and red curry paste turn into a creamy soup that’s ready in under 30 minutes. Add lime and cilantro at the end and suddenly that lonely can of pumpkin in the pantry has a MUCH MORE interesting future!

11) Mushroom Risotto by Damn Delicious

Mushroom Risotto

It might ask you to stay near the stove (but only for about 20 minutes of the actual stirring part). The rice gets toasted first, then white wine and warm stock go in gradually until everything turns properly creamy. Save a little of that buttery mushroom mixture for the top too… because burying all the good mushrooms in the rice would be a shame.

12) Sausage Stuffed Acorn Squash by An Edible Mosaic

Sausage Stuffed Acorn Squash

These little acorn squash halves basically become their own dinner bowls, which I always find fun. The filling has Italian turkey sausage, onion, celery, fresh herbs, cranberries, and pine nuts, so you get savory, sweet, and crunchy bits all in the same scoop. It takes a little longer than some of the recipes in this collection, but most of that time is just the squash roasting away in the oven.

13) Creamy Tortellini Soup by Natasha’s Kitchen

Creamy Tortellini Soup

This is the soup I’m picking when I want something cozy (and FAST!!). Italian sausage, cheese tortellini, kale, and a splash of heavy cream turn a simple tomato broth into a proper dinner and the whole thing is on the table in around 30 minutes. Just don’t wander off once the tortellini goes in… nobody wants mushy pasta floating around in there, haha.

14) Chicken Pot Pie Casserole by All Things Mamma

Chicken Pot Pie Casserole

Chicken pot pie flavor without making pie crust from scratch? Very welcome on a wednesday. Rotisserie chicken and vegetables go into the creamy filling, then refrigerated biscuits bake right on top until they’re golden and fluffy. It’s ready in about 30 minutes too, which feels almost suspicious for something this cozy!

15) Slow Cooker Apple Cider Beef Stew by Together as Family

Slow Cooker Apple Cider Beef Stew

You can start it before the day gets away from you. Beef, potatoes, carrots, celery, and peas cook low and slow in a rich gravy with apple cider mixed right into the broth, so there’s a little sweetness hiding behind all that beefy flavor. Eight hours later, stir in the cornstarch mixture and dinner looks like you’ve been working on it all afternoon.

16) Chicken and Noodles by Mom On Timeout

Chicken and Noodles

This lands somewhere between chicken noodle soup and the creamy filling of a chicken pot pie… which sounds VERY GOOD once it gets cold outside!

Rotisserie chicken saves you some work, while wide egg noodles, carrots, celery, and peas make the pot properly filling. The roux thickens everything at the end, so you get that cozy creamy sauce instead of a bowl full of broth.

17) Mexican Chicken and Sweet Potato Skillet by All Nutritious

Mexican Chicken and Sweet Potato Skillet

Here’s a clever weeknight shortcut: the sweet potato gets a head start in the microwave before it ever reaches the skillet. Then chicken, black beans, tomatoes, green chiles, and salsa all join in with plenty of cumin and chili powder. Melt cheddar over the whole thing at the end and dinner is done in about 35 minutes… and I’m definitely adding a squeeze of that lime before digging in.

18) Unstuffed Cabbage Rolls by xoxoBella

Unstuffed Cabbage Rolls

If you love cabbage rolls but you have absolutely no interest in wrapping cabbage leaves on a Tuesday, add this one to your favorites! Ground beef, cabbage, and tomato sauce cook together in one skillet with paprika and a splash of apple cider vinegar, then cooked rice gets stirred in right at the end.

And if you have leftover rice in the fridge, it makes the whole thing even easier. About 30 minutes and you’re eating!

19) Chicken and Wild Rice Casserole by Spend With Pennies

Chicken and Wild Rice Casserole

Wild rice and mushrooms already make this feel like proper fall comfort food, then sour cream, mushroom soup, and cheddar turn everything creamy before it heads into the oven. One useful little shortcut: leftover chicken works perfectly here, so there’s no need to start from raw chicken if you already have some hanging around. Just give the casserole 10 minutes to rest before scooping so the sauce thickens up while it sits.

20) Chili Mac by Once Upon a Chef

Chili Mac

This is chili and mac and cheese deciding there’s no reason to dirty two pots, haha. The beef gets plenty of smoky chili flavor from ancho chile powder, cumin, and paprika, then the macaroni cooks right in the tomato broth. (All in around 45 minutes!).

21) Instant Pot Roast Beef and Gravy by Chew Out Loud

Instant Pot Roast Beef and Gravy

Pot roast on a weeknight still sounds a little rebellious, haha, but the Instant Pot does make it much more realistic. The chuck roast pressure cooks first with onion, garlic, tomato paste, and broth, then the carrots, celery, and potatoes go in for just five minutes at the end so they don’t turn to mush. And yes, you get a proper gravy out of the same pot too.

22) Minestrone Soup by Belly Full

Minestrone Soup

This is basically the soup to make when the vegetable drawer is starting to look a little crowded. Potatoes, zucchini, kidney beans, kale, and tiny ditalini pasta all end up in that tomato broth, and you can swap in whatever vegetables need using up. Add Parmesan and a chunk of bread and I don’t think anyone is complaining about soup for dinner.

23) Easy Salisbury Steak by Wholesome Yum

Easy Salisbury Steak

This has all the old-school Salisbury steak comfort without the frozen dinner tray, haha. The beef patties cook in one skillet, then mushrooms and onions go straight into the same pan for the gravy. Here’s the interesting bit: cream cheese thickens that gravy instead of flour or cornstarch, and the whole dinner takes around 30 minutes. Definitely put mashed potatoes underneath to catch the sauce!!

24) One Pot Chicken Risoni with Crispy Salami by RecipeTin Eats

One Pot Chicken Risoni with Crispy Salami

The crispy salami is doing more work here than just sitting on top looking good. You fry it first, then use the flavorful fat left in the pan to cook the chicken and start the risoni. Add chickpeas, spinach, Parmesan, and a little cream and you end up with this creamy tomato pasta situation… all from ONE PAN!

25) One Pot Sausage and Rice by Tornadough Alli

One Pot Sausage and Rice

And to end this collection, a simple delicious one-pot dish with kielbasa, peppers, tomatoes with green chiles, and a little chipotle to give the rice plenty of flavor without needing a dozen pans. Once the rice and broth go in, though, there’s one rule: put the lid on and LEAVE IT ALONE for 25 minutes. No peeking! Then let it sit another five minutes and dinner is basically ready to scoop straight from the pot.

And there you go! 25 fall dinners for the nights when dinner somehow becomes urgent before you’ve even decided what you’re making, haha. I hope you found something new to try. I’m still thinking about that chicken and apples, but I know myself well enough to say the chili mac could easily win on a colder night!!

What about you? What’s the meal you start making again as soon as the weather cools down?
