25 Best Thanksgiving Casserole Recipes for Dinner

By Thanksgiving morning, there’s usually at least one casserole dish squeezed into my fridge behind the milk, covered in foil and waiting for its turn in the oven, haha. If I can get that far before everyone arrives, I already feel a little more organized!

25 Best Thanksgiving Casseroles

I’m a big casserole person at Thanksgiving. Not because they’re fancy or anything, but because they’re the dishes my family actually loves… (and most of the work happens in one baking dish). There’s always one pan that ends up almost empty while another somehow becomes tomorrow’s lunch. I’ve also learned not to leave every casserole for the last minute. If I can assemble one the night before, I will! And if there’s a breadcrumb or crunchy topping, I usually keep that part off until it’s ready to bake. Nobody wants to open the fridge the next morning and find a sad, soggy top…

So, there are plenty of familiar casseroles in this list, but I found some less obvious ones too that might be worth a try. Have a look and see what sounds good for your table this year… just remember to check how much room the turkey is taking up before you promise everyone five casseroles!

1) Turkey Sausage and Kale Casserole by Budget Bytes

Turkey Sausage and Kale Casserole

I know, this one might feel a little different from the usual Thanksgiving casserole lineup, but I bet you’ll love it! The turkey sausage makes it hearty enough to stand in as a main dish and the kale keeps it from feeling too heavy. If someone at your table is skipping the turkey, I’d happily put a big scoop of this on their plate.

2) Cabbage Casserole by Well Plated

Cabbage Casserole

Cabbage doesn’t usually get much attention at Thanksgiving, haha, but this might change that. It bakes under a creamy cheddar sauce with a buttery cracker top, so it still has plenty of comfort-food energy. I’d put this right next to the turkey and gravy and let people discover it for themselves.

3) Sweet Potato Casserole by Mom On Timeout

Sweet Potato Casserole

This is one of those casseroles that can start a family debate before it even reaches the oven… marshmallows or no marshmallows? The good news is you can go either way here. The sweet potato filling is creamy and that brown sugar pecan topping gives it plenty of crunch.

4) Easy Baked Ziti by On My Kids Plate

Easy Baked Ziti

Baked ziti at Thanksgiving? If pasta belongs on your family table, absolutely! This one is cheesy and easy to assemble the night before, which is a big help when the kitchen starts getting crowded. I also like it as a meatless option that still feels like a proper main dish.

5) Brussels Sprouts Casserole by My Rad Kitchen

Brussels Sprouts Casserole

If you have someone who always skips the Brussels sprouts, this might be the recipe that gets them curious. Bacon and a cheesy sauce do a pretty convincing job, haha. Roasting the sprouts first also means they keep some bite instead of disappearing into a soft casserole.

6) Butternut Squash Casserole by The Forked Spoon

Butternut Squash Casserole

I really like that it takes butternut squash in a savory direction. Bacon and smoked Gouda make it feel cozy enough for Thanksgiving, while the apple sneaks in a little sweetness without turning the whole thing into dessert. You can assemble it ahead too… always good news on a busy holiday!

7) Make-Ahead Mashed Potato Casserole by RecipeTin Eats

Make-Ahead Mashed Potato Casserole

Mashed potatoes that are already waiting in the fridge when Thanksgiving starts getting chaotic? Yes!! Sour cream keeps them soft when they’re reheated and that golden cheesy top makes them feel a little more special than the everyday version. Let the turkey rest while this goes back into the oven.

8) Cornbread Stuffing by Love and Lemons

Cornbread Stuffing

Technically, this is cornbread dressing because it bakes in a casserole dish instead of inside the turkey… there’s your Thanksgiving trivia for the day, haha. The homemade cornbread gets dried out first so it can soak up the vegetable broth and all those fresh herbs without turning mushy. It’s also completely vegetarian, which makes it an easy side for more people at the table.

9) Chicken and Stuffing Casserole by All Things Mamma

Chicken and Stuffing Casserole

This is definitely one for an easier Thanksgiving. The filling uses shredded cooked chicken with sautéed onion and carrot, then cream of chicken and mushroom soup make everything really creamy underneath the stuffing. And if you already have turkey? You can swap that in for the chicken.

10) Easy Corn Casserole by Chew Out Loud

Easy Corn Casserole

This isn’t the super-dense corn casserole I first pictured. It has cornmeal, creamed corn, whole kernels, and sour cream, and the finished texture is meant to be light and almost soufflé-like. One thing to plan for: after about 50 minutes in the oven, it needs time to sit and firm up before serving. You can assemble it the day before too… just save the panko topping for baking day.

11) Broccoli Cheese Casserole by I Heart Naptime

Broccoli Cheese Casserole

Frozen broccoli actually makes this one pretty easy, just make sure it’s thawed and well drained first!! The sauce uses cream of mushroom soup with sharp cheddar, then buttery Ritz crumbs go across the top before baking. And if you’re making it ahead? Leave those crackers off until the casserole is ready for the oven… nobody invited a soggy topping to this holiday.

12) Pineapple Casserole by Belly Full

Pineapple Casserole

Pineapple and cheddar in the same casserole sounds a little questionable at first, I know, haha. But this old-school Southern recipe mixes both crushed pineapple and little tidbits with sharp cheese, then covers everything with buttery Ritz crumbs. One useful thing to know, this one is actually best baked right after you assemble it, so I wouldn’t give it the overnight treatment.

13) Cheesy Potatoes au Gratin by CJ Eats

Cheesy Potatoes au Gratin

These potatoes are not messing around. Yukon Golds get sliced really thin, then layered with a creamy sauce made with cheddar and Gruyere. The biggest tip comes after baking… leave the casserole alone for 15 minutes! That little rest lets the sauce thicken so you get proper slices instead of a cheesy potato puddle.

14) Asparagus Casserole by The Real Food Dietitians

Asparagus Casserole

No canned soup hiding in this one! Fresh asparagus goes straight into the baking dish, then a homemade Swiss cheese sauce gets spooned over the top before the crackers go on. It only needs about 20 minutes in the oven too and you can assemble it a day or two ahead if Thanksgiving prep is already taking over the fridge.

15) Holiday Carrot Casserole by The Feathered Nester

Holiday Carrot Casserole

This one definitely sits on the sweeter side of the table… The carrots bake up soft underneath a buttery crumb topping, so it feels a little more playful than your usual vegetable casserole. You can prep it the day before too… which is exactly the kind of thing I like hearing in November, haha.

16) Ultimate Cheesy Squash Casserole by Southern Bite

Ultimate Cheesy Squash Casserole

Here’s a little detail you might not expect, the squash and onion are cooked in bacon grease first… and it tastes better that way, haha. The squash gets drained well before going into that creamy cheddar filling, which matters because summer squash holds a ton of water. And there are no eggs here on purpose, the sauce stays softer and creamier without them.

17) Shrimp Casserole by Natasha’s Kitchen

Shrimp Casserole

Shrimp casserole on Thanksgiving? Well, my family would happily make room for it! The shrimp get a quick bath in Old Bay-seasoned water before being folded into a cheesy filling, then buttery panko goes over the top. The whole thing cooks surprisingly fast too… around 30 minutes and you have a proper main dish for anyone who’d rather skip the turkey.

18) Fennel Gratin by Skinnytaste

Fennel Gratin

If fennel’s licorice flavor usually scares you off, this one might surprise you. It gets baked slowly with onion and broth until it turns mellow and tender, then Gruyere, Parmesan, and panko go on for that golden gratin top. It may feel a little fancy, but not in a fussy way… very nice for a table that already has plenty of potatoes.

19) Cauliflower Gratin by Eating Bird Food

Cauliflower Gratin

It’s basically potato gratin’s lighter cousin, but it still keeps the good part, plenty of Gruyere and Parmesan in that creamy sauce. Cauliflower takes the place of the potatoes, then breadcrumbs go over the top and you can broil it for a minute or two if you want those extra-browned edges. I probably would… that’s the corner I’m going for first.

20) Apple Sweet Potato Bake by All Nutritious

Apple Sweet Potato Bake

This one almost feels like Thanksgiving autumn got dumped into a baking dish, haha. You’ve got chunks of sweet potato and apple baked with warm spices, then raisins and walnuts scattered through the pan. No marshmallows, no creamy sauce… just a much simpler sweet side that would be really good next to something savory.

21) Creamy Celery Casserole by Spend With Pennies

Creamy Celery Casserole

Celery getting its own Thanksgiving casserole? I was curious too, haha. It stays a little crisp instead of cooking down completely and the water chestnuts add even more crunch underneath that buttery breadcrumb top. It’s also done in about 45 minutes so it doesn’t need to camp out in the oven all afternoon.

22) Green Bean Casserole by xoxoBella

Green Bean Casserole

It doesn’t completely abandon the classic… it just gives it a little more texture! Fresh green beans only get a quick blanch and some of those crispy fried onions actually go inside the casserole before the rest are piled on top. The buttermilk in the mushroom sauce caught my attention too… a little tang sounds very good with all that richness.

23) Vegetarian Shepherd’s Pie by Sally’s Baking

Vegetarian Shepherd's Pie

Now this is what you can offer someone skipping the turkey. Under that cheesy mashed potato top is a proper savory filling with mushrooms, white beans, vegetables, and even a little red wine. Then the potatoes get a quick blast under the broiler at the end so you get those golden crispy spots… definitely save me one of those corners!

24) Funeral Potatoes by Together as Family

Funeral Potatoes

Basically built for a big family table! Frozen cubed hash browns go into the creamy filling, then crushed cornflakes mixed with butter make that very crunchy top. And yes, the potatoes really do need to thaw first… otherwise they may still be stubborn when dinner is ready.

25) Southern Baked Macaroni and Cheese by Tasty Oven

Southern Baked Macaroni and Cheese

And to close this list of delicious ideas, a properly creamy mac and cheese with both whole milk and evaporated milk in the sauce! It also uses extra-sharp yellow and white cheddar, then bakes until the top gets golden. One tip you might wanna try, shred the cheese yourself… mac and cheese deserves the good treatment for the holidays, haha.

First, thanks so much for reading, your support means a lot! Okay, now, important Thanksgiving question before you go…

If you could only save ONE casserole from the table, which one is staying? I think this could cause some serious family arguments, haha. Mac and cheese? Sweet potato casserole? Those crispy funeral potatoes quietly sitting in the corner? Tell me your winner in the comments because I genuinely want to know which casserole has the strongest fan club around here!

And if you try something new from this list, come back after Thanksgiving and tell me how it went. Maybe you’ll accidentally create next year’s non-negotiable family dish… those are always the best ones!!
