  • Salt and black pepper, to taste

1. Preheat the oven

Start by preheating your oven to 200°C (400°F) and lining a baking sheet with parchment paper. That way, nothing sticks and cleanup’s way easier. PLUS, it helps the carrots crisp up instead of steaming!

2. Prep the carrots

Peel your carrots and slice them into thick sticks, kind of like chunky fries… Try to keep the pieces about the same size so they roast evenly. If they’re too skinny, they’ll burn before the inside softens, and if they’re too thick, they’ll stay kinda mushy.

3. Coat with oil and seasoning

Toss the carrots in a big bowl with the olive oil until they’re nice and coated. Then, in a small bowl, mix up your dry coating, almond flour, grated parmesan, garlic powder, onion powder, smoked paprika, dried parsley, and a good pinch of salt and pepper.
