And yes, you can 100% make them at HOME (even if yeast recipes usually scare you off). Especially if you’ve got a mixer to handle the kneading for you. I promise, it’s mostly hands-off… and the results?! Absolutely bakery-worthy.

Working with yeast can feel a little intimidating if it’s not in your usual baking lineup. Been there, truly… Here’s the thing though: once you’ve had freshly baked sweet buns that you made yourself, warm from the oven, soft in the middle, and bursting with real berry flavor, you’ll never look at store-bought versions the same way again.

They just don’t hit the same, ya know? Especially those sad ones with barely any filling and a weird aftertaste from the preservatives.

Tips for Success

  • Don’t rush the dough.
    Yeast needs time to do its thing! That’s where the soft, pillowy texture comes from… If your kitchen is chilly, place the bowl in a slightly warmed (but turned off) oven with the oven light on to help it rise.
  • Press deep wells but not too deep.
    When shaping the buns, press down firmly in the center to make space for the filling but be careful not to poke all the way through the bottom. You want a sturdy little pocket to hold the berries in place.
  • Chill the crumble topping.
    If your kitchen is warm, pop the crumble in the fridge for 10–15 minutes after mixing. This helps it bake into crisp, buttery crumbles rather than melting into the bun.
  • Use parchment paper.
    The berry filling may bubble up while baking, and sticky fruit on a metal tray is no fun to clean. Parchment paper keeps everything tidy and makes cleanup easier!
  • Let them cool slightly before serving.
    The filling comes out HOT, like, molten lava hot! Give the buns 10–15 minutes to cool before taking a bite, unless you enjoy burning the roof of your mouth (I never learn…)
  • Make the dough ahead.
    You can make the dough the night before and let it rise in the fridge overnight. The next morning, shape, fill, and bake, perfect for weekend brunch or holiday mornings without the early wake-up!

Ingredients

For the Dough:

  • 3 cups all-purpose flour (plus a little extra for dusting)
  • 1 packet active dry yeast (2¼ teaspoons)
  • ½ cup warm milk (about 100°F, warm to the touch, not hot)
  • ¼ cup sugar
  • 2 large eggs (room temperature)
  • 4 tablespoons unsalted butter (softened)
  • ¾ teaspoon salt

For the Berry Filling:

  • 1½ cups mixed berries
    (fresh or frozen raspberries, blackberries, blueberries, whatever you have)
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • (Optional: 1 teaspoon vanilla extract or lemon zest, for extra flavor!)

For the Crumble Topping:

  • ¼ cup unsalted butter (melted)
  • ½ cup all-purpose flour
  • ¼ cup sugar
  • Pinch of salt
  • (Optional: a pinch of cinnamon if you want a cozy touch)

For the Egg Wash:

  • 1 egg + 1 tablespoon milk, whisked together

How to Make Sweet Berry Buns with Crumble

Step 1: Make the Dough

Place all the dough ingredients into a large bowl: flour, yeast, sugar, warm milk, eggs, butter, and salt.
Mix everything together with a wooden spoon or your hands until a rough dough forms.

Knead by hand on a lightly floured surface for 10 minutes OR mix with a stand mixer fitted with a dough hook on speed 2 for 5–6 minutes. The dough should feel smooth and slightly tacky, not too sticky, not dry!

Place the dough in a clean bowl, cover with cling wrap or a damp tea towel and let it rise in a warm place until doubled in size! This usually takes 1 to 1½ hours depending on the weather…

TIP: My go-to spot is the turned-off oven with just the light on, it creates a gentle warmth with no drafts.

Step 2: Cook the Berry Filling

While the dough is rising, let’s make the berry filling!

Place the berries, sugar, and lemon juice in a small saucepan over medium heat. Stir occasionally until the berries START to release juice and break down, about 5–6 minutes.

Mix the cornstarch with 1 tablespoon of water in a small cup, then stir that into the berries. Let it simmer for another 1–2 minutes until slightly thickened. Then, remove from heat and cool completely. It will thicken more as it cools, which is important so the filling doesn’t leak everywhere in the oven!

Step 3: Make the Crumble

Mix the melted butter, flour, sugar and a pinch of salt in a small bowl using a fork. It should look crumbly and a bit sandy, not a smooth paste! If your kitchen is warm, pop the bowl in the fridge while you shape the buns.

Step 4: Shape the Buns

Once the dough has doubled, punch it down to release the air and divide into 10–12 equal pieces. Roll each piece into a smooth ball and place them on a parchment-lined baking tray with space between each one.

Use your fingers or the BASE of a small glass to press a deep well in the center of each bun. It should be deep enough to hold a spoonful of filling, but don’t press all the way through, you want the base to stay intact!

Now, spoon some of the cooled berry mixture into each well. Don’t overfill, 1 to 1½ teaspoons is plenty…

Sprinkle the crumble topping over each bun, focusing around the edges and a bit over the filling. Don’t press it down, just let it sit loosely on top!

Cover the buns loosely with a clean kitchen towel and let them rise again for 30–40 minutes until slightly puffy.

Step 5: Bake

Preheat the oven to 350°F / 180°C. Brush the edges of each bun with the egg wash (just the dough part, not the filling or crumble).

BAKE for 20–25 minutes until golden brown and the crumble is lightly crisped!

Then, let the buns cool for at least 10–15 minutes before serving… The filling will be very hot straight from the oven! These are best eaten FRESH on the same day, ideally still a little warm.

Can I use store-bought jam instead of cooking the filling?

You CAN but make sure it’s a thicker, spoonable jam! If it’s too runny, it may leak during baking. Look for fruit preserves with chunks of berry, or even better, use a low-sugar jam so it doesn’t get overly sweet.

Can I use other fruits?

Absolutely! Blueberries, chopped strawberries, blackberries, even a little rhubarb, all work GREAT! You can keep it simple with one fruit or use a frozen berry mix like we did.

  5. Punch down the dough and divide into 10–12 equal pieces. Roll into balls and place on a parchment-lined baking sheet. Press a deep well into each center without going all the way through.
  6. Spoon cooled berry filling into each well. Top generously with crumble.
  7. Cover buns loosely and let rise 30–40 minutes until slightly puffy.
  8. Preheat oven to 350°F / 180°C. Brush dough edges with egg wash. Bake for 20–25 minutes until golden brown.

Notes

  • Freezer Friendly:
    These buns freeze well! Once cooled, wrap individually and freeze for up to 2 months. Reheat in the oven at 300°F (150°C) for 10–12 minutes.
  • Don’t overfill:
    A small spoonful of berry filling is enough, too much, and it may bubble over or leak during baking.
  • Crumb topping tip:
    If the crumble starts to brown too quickly while baking, loosely tent the tray with foil in the last 5 minutes.
