I know, I know… kale gets a bad rap. It’s not usually what you see in comfort food roundups or cheesy casseroles (which I love, by the way). But hear me out: this isn’t just a healthy-eating moment. This kale salad is legit DELICIOUS!

It’s the one I make when I’ve got five minutes, zero brain cells left and need to feel like a grown-up eating something fresh. (Bonus: my kids actually eat it too, mostly for the pomegranate “gems,” but still, a win is a win!)

The whole thing comes together in one bowl, no cooking required and the combo of flavors is 👌🏼 crunchy, sweet, bright and satisfying. If you bring this to a potluck or Friendsgiving, someone will absolutely ask for the recipe. Promise.

Tips for Making the Best Kale Pomegranate Salad

Massage. The. Kale.

Yes, really. Kale needs a little TLC. Once it’s chopped, toss it with olive oil and a pinch of salt, then rub it between your fingers for a minute or two. The leaves will soften, darken and become way more pleasant to eat. (Think less chewing cardboard and more yum, this is tender!)

If you’ve got kids helping, tell them they get to give the kale a massage. Mine think it’s hilarious!

Use a crisp apple

This is not the moment for a mushy apple from the back of the drawer. Go for a fresh, crunchy variety like Honeycrisp, Pink Lady or Gala. The crunch really makes it POP!

Sweet extras

This salad is great as-is but if you want to level it up:

  • Add a drizzle of honey or maple syrup to balance the tart lemon
  • Toss in a handful of crumbled goat cheese or feta
  • Use candied pecans instead of plain (you know I won’t stop you)

Lemon vs. Vinegar

Lemon juice keeps things bright and fresh, but apple cider vinegar also works AND adds a nice bite! Use what you’ve got.

How to Store

  • Store in an airtight container in the fridge, it’ll hold up for up to 3 days, maybe even longer depending on how juicy your apples are.
  • If you’re making it ahead for a dinner party or potluck, go ahead and assemble the whole thing, just wait to add the apples and pecans until the last minute if you want max crunch!
  • Got leftovers? They’re GREAT the next day. The kale soaks up more flavor overnight and gets even better. (I’ve been known to eat it straight from the bowl while standing at the fridge. No shame!)

This is ONE of those salads I come back to again and again, especially when I want to feel like I’m eating something “grown-up” without putting in a ton of effort!! It’s colorful, crunchy, totally crowd-pleasing and BEST of all… you don’t even have to turn on the stove!

Ingredients
  

  • 1 large bunch curly kale chopped (about 6–8 cups)
  • 1 large crisp apple like Honeycrisp or Gala, thinly sliced
  • ¼ cup pomegranate arils
  • ¼ cup pecan halves raw or toasted
  • 1 –2 tsp olive oil
  • A small squeeze of lemon juice or drizzle of apple cider vinegar
  • Pinch of salt
Optional Add-Ins:
  • Crumbled goat cheese or feta
  • A drizzle of honey or maple syrup
  • Candied pecans
  • Extra sea salt to finish

Instructions
 

  1. Massage the kale. Place the chopped kale in a large bowl with olive oil and a pinch of salt. Rub it between your fingers for about 1–2 minutes until softened.
  2. Add the good stuff. Toss in sliced apples, pomegranate arils and pecans.
  3. Dress it. Add a squeeze of lemon juice or splash of vinegar. Toss everything together gently to combine.
  4. Taste and adjust. Add honey or cheese if you’d like or enjoy it just as it is!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This salad actually gets better after sitting for a bit, just give it a quick toss before serving.
