Easy Christmas Cookie Bars

These Christmas Cookie Bars are soft, gooey, and packed with chocolate chips and festive M&M’s! Made in one bowl and baked in a 9×13 pan, they’re the PERFECT easy holiday treat when you want something sweet without rolling a single cookie. Colorful, chewy, and a total family favorite!

Ingredients
  

  • 1 cup 200 g unsalted butter, melted
  • 1 cup 200 g light brown sugar
  • cup 130 g white sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 2 cups 260 g all-purpose flour
  • ½ teaspoon salt
  • 1 cup 180 g semi-sweet chocolate chips
  • 1 cup 180 g M&M’s

Instructions
 

  1. Preheat the oven to 350°F (180°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the long sides.
  2. In a large bowl, whisk together the melted butter, brown sugar, and white sugar until smooth.
  3. Add the eggs and vanilla. Whisk again until well combined.
  4. Add the flour and salt. Use a spatula to fold the dry ingredients into the wet ingredients just until no streaks of flour remain. Do not overmix.
  5. Stir in the chocolate chips and about ⅔ of the M&M’s.
  6. Spread the dough evenly into the prepared pan. Sprinkle the remaining M&M’s over the top.
  7. Bake for 25–28 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Place the pan on a rack and let the bars cool completely.
  9. Use the parchment overhang to lift the cooled slab out of the pan. Transfer to a cutting board and cut into 18 bars.

Notes

  • For softer, gooier bars, bake closer to 25 minutes. For firmer bars, bake up to 28 minutes.
  • You can swap the chocolate chips for white, milk, or dark chocolate chips.
  • Add chopped nuts (like walnuts or pecans) for extra crunch.
  • If you’re using a different pan size, adjust the thickness and baking time as needed.
