If you’re craving a Christmas treat that’s EASY and honestly impossible to stop eating… pull up a chair, because these Christmas Cookie Bars are the ones I make when life is busy but I still want that cozy and homemade holiday feeling in the house.

After work the other day, I threw these together with the kids, and yes, they added the yellow M&M’s for “extra happiness” (their words… but I kind of agree). The result?! Thick, soft, slightly gooey bars with melty chocolate and crunchy festive candies on top. Pure joy.
What I love most is how these bars save you from scooping a million cookies. Just mix, pour, bake… and suddenly you’ve got a whole tray of Christmas cheer cooling on the counter. They’re the kind of treat that brings everyone into the kitchen the moment you lift them out of the oven, trust me 😋
Get ready, because you’re going to want to bookmark this one for ALL your holiday gatherings (or just a late-night sweet tooth moment).
Helpful Tips
- Let them cool completely. I know it’s tough, but the bars firm up as they cool. Cutting too early = delicious chaos.
- Use room-temperature eggs. Cold eggs can make the melted butter seize, and nobody has time for that after a long day.
- Mix gently once the flour goes in. Overmixing can make the bars dense. A few folds with a spatula is all they need.
- Add extra M&M’s on top before baking. Makes the bars look extra festive and yes, the yellow ones belong there too!
- Check them early if your oven runs hot. Around minute 23, take a peek. Golden edges + slightly soft center = perfection.
- Line the pan with parchment and leave an overhang. Works like little handles, so you can lift the whole slab out in one go.
- Sprinkle a bit of sugar on top. Adds a subtle sparkle and a sweet, crackly crust (simple but SO good).
- Customize the texture with bake time. Want gooey bars? Bake on the lower end. Want firmer squares? Add 2–3 more minutes.

Substitutions and Additions
- Different M&M’s. Go wild here, holiday mixes, peanut M&M’s, minis… they all work. The minis melt in these cute little pockets, and honestly, it’s ADORABLE.
- Chocolate Swap. Not a fan of semi-sweet? Try milk chocolate for extra sweetness, dark chocolate for a richer vibe, or even a mix (that’s what I do on days I can’t choose, which is often)!
- Add a Crunchy Moment. Chopped pecans, walnuts, or even almonds give these bars a cozy crunch. My family loves the texture, especially around the edges.
- Festive Sprinkles. If you want the “wow” factor on top, toss a handful of Christmas sprinkles right before baking. Just keep them on the surface so the colors stay bright and happy.
- Caramel Lovers, Listen Up. Drizzle a little caramel over the batter before baking… or after baking… or both!
- Peanut Butter Twist. Add a few dollops of peanut butter and swirl it gently through the batter. SUPER good and kind of dangerous to have around the house.
- Extra Flavor Boost. A pinch of cinnamon or a splash of almond extract gives the bars a warm holiday twist. Simple but magical.
- Toasty Coconut. If you’re a coconut person, fold in a small handful of shredded coconut. It adds sweetness and a soft chew that feels almost like a Christmas macaroon sneaking into the party.

Ingredients
- 1 cup (200g) unsalted butter, melted
- 1 cup (200g) light brown sugar
- ⅔ cup (130g) white sugar
- 2 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 2 cups (260g) all-purpose flour
- ½ teaspoon salt
- 1 cup (180g) semi-sweet chocolate chips
- 1 cup (180g) M&M’s
How to Make Christmas Cookie Bars
1. Prep the pan and oven.
Preheat your oven to 350°F (180°C). We made this recipe in a 9×13-inch baking pan and it works beautifully for thick, chewy bars. (If your pan is a different size, just leave a COMMENT below, we’ll happily help you adjust the recipe so it fits perfectly!)
Line the pan with parchment paper, letting it hang over the sides like little handles. No need to grease it!
2. Mix the melted butter and sugars.
In a large bowl, whisk together the melted butter, brown sugar, and white sugar until the mixture looks smooth and shiny. This is the start of that chewy texture we LOVE.
3. Add the eggs and vanilla.
Whisk in the eggs and vanilla extract until the mixture becomes creamy. (No need to go wild here, just mix until it’s all friendly in the bowl.)
4. Fold in the dry ingredients.
Add the flour and salt. Switch to a spatula and gently fold everything together until you don’t see any dry spots. The batter will be thick, that’s exactly what we want.
5. Add the chocolate magic.
Stir in the chocolate chips and about ⅔ of your M&M’s. Save the rest for the top, it makes the bars look bakery-perfect!

6. Spread the batter in the pan.
Scoop the dough into your prepared pan and spread it evenly. Press the remaining M&M’s over the top so every square gets those cute bursts of color.
7. Bake. Bake for 25–28 minutes or until the edges are golden and a toothpick comes out with a few soft crumbs. (If your oven runs hot, mine absolutely has a mind of its own in December, start checking at minute 23.)

8. Cool completely. Let the bars cool all the way in the pan. I know… waiting is tough. But it’s the secret to clean slices and chewy centers!
9. Slice and enjoy. Lift the whole slab out using the parchment handles, place it on a cutting board and cut into squares or bars. Around here, we get about 18 medium BARS, depending on how generous I’m feeling that day.

Serving Ideas
These Christmas cookie bars fit in pretty much anywhere during the holidays… movie night, school parties, cookie exchanges, you name it. And honestly they’re one of those treats people grab before you even finish setting the plate down!
If you want to make them feel a little extra festive, try serving them slightly warm with a scoop of vanilla ice cream or a quick drizzle of melted chocolate. SO good!
They also pair really nicely with a hot cup of coffee or cocoa, the warm-and-gooey combo just hits differently this time of year.

How to Store
- Room temperature:
Keep the bars in an airtight container on the counter. They’ll stay soft and delicious for up to 5 days. Honestly… they taste even better the next day once the flavors settle a bit! - Fridge:
If you like a firmer, denser bar (my kids LOVE them cold), store them in the fridge for up to 1 week. The chocolate gets a little snappy, it’s amazing. - Freezer:
Want to save a batch for later? Let the bars cool completely, slice them, then freeze in a sealed container or freezer bag. They’ll keep beautifully for up to 3 months. Reheat when you’re ready… or eat them cold if you’re impatient like me. - To reheat:
Warm a bar in the microwave for 10–15 seconds to bring back that soft, gooey center. You can also pop them in a 300°F (150°C) oven for about 5 minutes for that “just baked” magic. Works every time!
See, I told you… these Christmas Cookie Bars are SO simple and SO good! Those golden tops, the melty middle, the crunchy M&M’s popping through… nobody is guessing they came together in one bowl after a long day, right?!
These are the kind of treats that disappear fast, my family basically circles the kitchen like hawks when they smell them baking.
If you didn’t get the chance to try them today, go ahead and SAVE this recipe for later… because once you make them, they’ll be a new holiday favorite at your house too. Enjoy every sweet, gooey bite, friend!
