PREP: 4 minutes
COOK: 1 minute
TOTAL: 5 minutes
Servings: 2 Mug Cakes
Course: Dessert, Snack

Ingredients

  • 2 ripe bananas very ripe, with brown spots
  • 2 eggs
  • 4 tablespoons unsweetened cocoa powder
  • 4 squares dark or milk chocolate for the topping
  • 2 teaspoons milk

Instructions

  1. Mash the bananas. In a medium mixing bowl, mash the bananas until mostly smooth.
  2. Add the eggs. Crack in the eggs and whisk together until fully combined and slightly frothy.
  3. Mix in cocoa powder. Stir in the cocoa powder until the batter is smooth and evenly mixed.
  4. Prepare the mugs. Lightly grease two large (12–14 oz) microwave-safe mugs. Divide the batter evenly between them, filling no more than halfway.
  5. Microwave one at a time. Cook each mug separately for 1 minute. Check the top, it should be set but still soft in the middle. If needed, microwave for another 10–15 seconds. (Don’t overcook.)
  6. Make the topping. In a small bowl, combine the chocolate squares and milk. Microwave in 20-second intervals, stirring between each, until smooth and melted.
  7. Finish and serve. Pour the warm chocolate topping over the mug cakes while they’re still hot. Serve immediately!

Notes

  • Use ripe bananas: The darker and spottier, the better. They’re sweeter and mash more easily, which makes the cake moist and flavorful without needing any added sugar.
  • Microwave times may vary: Every microwave is different! Start with 1 minute and add 10–15 seconds if the top still looks wet. The center should be soft but not raw.
