These are the muffins you make when you want someone to take a bite, pause, and say “WAIT… how did you make these?!” They taste like your favorite bakery muffin but come together in less time than it takes to preheat the oven!

The original version was made with blueberries (you can still grab that recipe right here), but once I swapped in chocolate chips?! Game over. Honestly, I may never go back. (I mean, warm pockets of chocolate and a slightly crisp sugary top? COME ON!)

Why You’ll Love It

  • Only 3 ingredients. Yep, THREE. No eggs, no oil, no mystery ingredients… Just ice cream, self-rising flour and chocolate chips!
  • Bakery-style results. These bake up golden on top, soft and fluffy inside, with melty chocolate in every bite. No one will guess how easy they were.
  • No mixer required. Just a bowl and a spoon. Honestly, the hardest part is waiting for them to cool down enough to eat…
  • Customizable. Use your favorite ice cream flavor, try different add-ins or go back to blueberries.
  • Great for kids (or lazy adults). This is ONE of those foolproof recipes that’s fun to make with little helpers or for tired grown-ups who just want a muffin and a moment of peace!

Ingredients

You only need a few basics for these muffins (seriously, it doesn’t get EASIER than this). Scroll down to the full recipe card for exact measurements and instructions, but here’s what you’ll need.

  • Vanilla ice cream. Go for full-fat, classic vanilla ice cream, the kind made with egg yolks if possible (French vanilla style). It gives the muffins richness and structure. Let it soften slightly before using!
  • Self-rising flour. This is what helps the muffins rise without any added baking powder. If you don’t have self-rising, you can mix all-purpose flour with baking powder and a pinch of salt (I’ll include that ratio in the recipe card).
  • Chocolate chips. I used semi-sweet but milk or dark would also work GREAT! Mini chips give more melty bits in each bite but regular size is just as dreamy.
  • Optional (but so worth it):
A sprinkle of coarse sugar on top for a golden crunchy finish!

How to Make 3-Ingredient Chocolate Chip Muffins

1. Preheat your oven.
Set it to 375°F (190°C) and line a muffin pan with paper liners (or grease it lightly if you’re skipping the liners). You’ll want everything ready to go once the batter’s mixed!

2. Soften the ice cream.
Let the ice cream sit out for 5–10 minutes until it’s soft BUT not melted. You want it scoopable and creamy, not a puddle… This is key for the texture!

3. Mix the batter.
In a medium bowl, stir together the softened ice cream and self-rising flour until mostly combined (a few lumps are fine). Then gently fold in the chocolate chips. Don’t overmix, just until it looks like muffin batter.

4. Fill the muffin cups.
Spoon the batter into the muffin cups, filling them about ¾ of the way. Optional: Sprinkle a little coarse sugar on top before baking, it gives the muffins a light CRUNCH and golden top that’s so worth it!

5. Bake.
Bake for 25 to 28 minutes OR until the tops are golden and a toothpick comes out clean (or with just a few moist crumbs). Try not to open the oven too early, they need that steady heat to rise!

6. Cool and enjoy.
Let them cool in the pan for about 10 minutes and then transfer to a wire rack. Eat warm for the BEST gooey chocolate chip experience!

How to Store

These muffins are best the day they’re baked, but if you’ve got leftovers (or showed more restraint than I ever do…)

  • Room temperature: Store in an airtight container for up to 2 days. The tops might lose a little crispness but they’ll still be soft and tasty.
  • To reheat: Pop one in the microwave for 10–15 seconds to bring back that just-baked feel. The chocolate gets all gooey again and it’s so GOOD.
  • Freezing: Yep, you can freeze them! Wrap individually and freeze for up to 1 month. Just thaw at room temp or warm in the oven at 300°F (150°C) for 5–7 minutes.

3-Ingredient Chocolate Chip Muffins

These golden, bakery-style muffins are soft, fluffy, and loaded with melty chocolate chips and they’re made with just three ingredients! No eggs, no butter, no mixer. Just ice cream, self-rising flour and chocolate chips. The easiest muffins you’ll ever bake!
PREP: 10 minutes
COOK: 25 minutes
TOTAL: 35 minutes
Servings: 6 Muffins
Course: Breakfast, Dessert, Snack

Ingredients

  • cups 255 g vanilla ice cream, softened (not melted)
  • 1 cup 130 g self-rising flour
  • ½ cup 100 g chocolate chips (semi-sweet or milk)
  • Optional: 1 tablespoon coarse sugar for topping

Instructions

  1. Preheat oven to 375°F (190°C) and line a 6-cup muffin pan with paper liners or grease lightly.
  2. Soften the ice cream at room temperature for 5–10 minutes until creamy but not fully melted.
  3. In a mixing bowl, stir together the softened ice cream and self-rising flour until just combined.
  4. Fold in the chocolate chips. Do not overmix.
  5. Spoon batter into muffin cups, filling about ¾ full.
  6. Optional: Sprinkle coarse sugar on top for a crunchy finish.
  7. Bake for 25–28 minutes, or until tops are golden and a toothpick comes out clean.
  8. Let muffins cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Best served warm!

Notes

  • If you don’t have self-rising flour, use 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt.
  • Avoid using light or dairy-free ice cream, full-fat vanilla (French-style with egg yolks) gives the best texture.
  • These are best fresh but can be stored at room temp for up to 2 days or frozen for 1 month.
  • Reheat in the microwave for 10–15 seconds or warm in the oven to refresh the texture.
