In a large mixing bowl, combine the flour, cocoa powder, sugar, salt, yeast, and cinnamon. Give everything a good stir so the ingredients are evenly distributed. It’s worth double-checking that your yeast is still fresh before starting, if it’s expired, the dough just won’t rise the way it should…

Pour in the warm water, honey, and olive oil. The water should FEEL like a warm bath, not hot, just comfortably warm to the touch… Mix everything with a spoon until it turns into a sticky dough. Don’t worry if it looks a little rough or lumpy at first, that’s totally normal!

If it feels dry, add a tablespoon of water. If it’s too wet and hard to handle, sprinkle in a little more flour. You’re aiming for a DOUGH that’s soft, sticky, and stretchy.

Add about half the chocolate chips or chunks and gently fold them into the dough! They don’t need to be perfectly spread out, just mixed in enough so you’ll get melty bits in every slice later. If you want to throw in some chopped nuts here, go for it, it adds a great crunch!

Cover the bowl with a clean kitchen towel and let the dough REST in a warm place for about 1 hour, until it doubles in size.   • Room temperature – Store leftovers in an airtight container for up to 2 days. Keep it in a cool, dry spot (not the fridge) to maintain the soft texture.
  • Freezer-friendly – You can freeze it already sliced! Wrap individual pieces in parchment or plastic wrap, then place them in a freezer bag or container. It keeps well for about a month.
  • To reheat – Warm slices in the oven at 160°C (320°F) for 5 to 7 minutes until soft and just a little toasty. If reheating from frozen, no need to thaw, just give it a few extra minutes in the oven.

Instructions
