1. Boil the potatoes

Peel and cube your potatoes, then toss them into a big pot and cover with cold water. Add a big pinch of salt, THIS is your chance to get flavor inside the potatoes!

Bring it to a boil, then lower the heat and let them simmer for about 12–15 minutes, or until they’re nice and soft when you poke them with a fork.

Once they’re done, drain them well and let them sit in the hot pot for a minute or two. This little steam off moment helps keep your mash from getting watery.

2. Mash and mix

Add in the WARM milk (not cold!), melted butter, and sour cream. Using warm ingredients keeps your potatoes light and fluffy, nobody wants stiff mashed potatoes…
