These are truly the BEST burrito bowls we’ve made at home, pinky promise! Juicy grilled chicken, marinated in salsa and lime, served over fluffy white rice with all the toppings: beans, corn, guac, sour cream, and plenty of crunch from the tortilla chips. It’s like your favorite takeout, but fresher and healthier!

Ingredients (serves 4)

For the creamy salsa-lime chicken

  • 2 large boneless, skinless chicken breasts
  • ⅓ cup salsa (mild, medium, or spicy, your choice)
  • 2 tablespoons plain Greek yogurt or sour cream
  • Juice of 1 lime
  • 1 garlic clove, minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (for cooking)

For the bowls

  • 2 cups cooked white rice
  • 1 cup black or kidney beans, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen and thawed)
  • 1 cup cherry tomatoes, finely diced
  • ¼ cup finely chopped red onion
  • Juice of ½ lime
  • Salt, pepper, and chopped cilantro (optional)

For toppings

  • 1 cup shredded romaine or leafy greens
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ cup guacamole
  • ½ cup sour cream or Greek yogurt
  • 1 cup tortilla chips (whole or crushed)
  • Extra lime wedges and salsa, for serving

How to Make Chicken Burrito Bowls

1. Marinate the chicken. In a bowl, stir together the salsa, Greek yogurt (or sour cream), lime juice, garlic, paprika, cumin, salt, and pepper. Add the chicken and toss to coat. Cover and MARINATE for at least 30 minutes! But if you’ve got time, let it go longer for even more flavor…

2. Cook the chicken. Heat the olive oil in a grill pan or large skillet over medium-high heat. Cook the chicken breasts for about 5–6 minutes per side, or until golden and fully cooked through. Remove from the pan and let them rest for 5 minutes before slicing.

3. Make the fresh salsa. In a small bowl, mix the diced cherry tomatoes, red onion, lime juice, and a pinch of salt and pepper. Add chopped cilantro if you like it!

4. Prep the rest of the bowl ingredients. While the chicken cooks, warm the beans and corn (if using cold or frozen). Get your toppings ready: shred the cheese, chop the lettuce, and grab the guac and sour cream.

5. Assemble the bowls. Start with a scoop of rice in each bowl. Top with sliced chicken, beans, corn, tomato salsa, lettuce, cheese, guacamole, and sour cream. Finish with tortilla chips, either whole or crushed for CRUNCH!

6. Finish with extras. Add a squeeze of fresh lime, a little more salsa, and any extra toppings you love. Serve right away or pack them up for the week.

Storage Tips

  • Let everything cool before packing. This helps keep the rice fluffy and stops the toppings from getting soggy.
  • Store in separate compartments if you want to keep the hot and cold ingredients apart, especially the guac, sour cream, and chips…
  • Refrigerate in airtight containers for up to 4 days. These BOWLS hold up really well, especially the chicken and rice.
  • Reheat just the base. Warm the chicken, beans, corn, and rice, then add your cold toppings after (like guac, lettuce, and sour cream).
  • Skip freezing the whole bowl. The chicken freezes fine on its own, but the fresh toppings won’t hold up well once thawed.
  • Pack chips separately. If you’re meal prepping, stash the tortilla chips in a little bag or container so they stay nice and crisp.
