  • 1 to 2 teaspoons maple syrup or honey (optional) – Only if you’re going for a slightly sweet version.

How to Make Pistachio Paste

Start by soaking your pistachios in hot water for a minute or two. This helps loosen the skins, which you can then rub off with your fingers or a clean kitchen towel. You don’t have to get every single bit, just peeling MOST of them will already make a big difference in the final color!

This step is optional, but if you’re after that naturally vibrant green it’s absolutely worth the extra couple of minutes!

Once the pistachios are peeled (or not, if you’re skipping that step), transfer them to a food processor or high-powered blender. Blend in short bursts at first to break the nuts down, then switch to longer blends until the mixture starts to look like a fine, crumbly meal.

It might take a few stops to scrape down the sides, especially early on, just keep going!

When the mixture is evenly ground, start adding the oil slowly while blending. Pour it in one tablespoon at a time, pausing to scrape down the sides as needed. The texture will shift as you go, at first it’s dry and sandy, but then it BEGINS to come together, thick and creamy!

Keep blending until it’s smooth and glossy, or stop a little sooner if you like a more rustic, spreadable consistency… You can ALSO add a little extra oil for a looser, drizzle-style paste, it all depends on how you plan to use it!

Now’s a good time to taste. A small pinch of salt helps highlight the pistachio flavor without making it salty. And if you’re leaning sweet, especially if this paste is destined for dessert or toast, you can blend in a little honey or maple syrup at the end to round it out.

Once the paste is smooth and tastes the way you want, transfer it to a clean JAR! Let it cool to room temperature, then pop it in the fridge. It’ll stay fresh for up to two weeks. If it firms up in the fridge or the oil separates a little, just give it a stir, that’s completely normal!

You can also freeze it in small jars or silicone molds if you want to keep some on hand long-term.

Tips for Success

✔️ Use raw, unsalted pistachios. Roasted ones will work in a pinch, but for the cleanest, brightest flavor (and that gorgeous green color), go raw. Salted nuts can mess with the flavor balance, AND trust me you want the pistachios to shine!

✔️ Peel those pistachios (mostly). Okay, it’s a bit tedious, but removing the skins is what takes your paste from “meh” to WOW! No need to stress about every speck, just rub off as much as you can after a quick soak in hot water. Your blender, and your eyeballs, will thank you!

✔️ Be patient with the blender. It’s tempting to stop when it’s halfway there, but don’t! Keep blending until the paste is smooth and creamy. Scrape down the sides, blend again, and give it time to do its thing.

✔️ Start slow with the oil. Pour it in little by little, just until you hit your perfect texture. Too much too fast and you might end up with pistachio soup (delicious, but maybe not what you’re going for)…

  • cups roasted pistachios unsalted, shelled
  • 1 –2 teaspoons neutral oil like grapeseed or sunflower, only if needed

  1. Prep the pistachios: If your pistachios aren’t already roasted, roast them on a baking sheet at 325°F (160°C) for 7–8 minutes. Let them cool completely, this helps prevent the paste from turning greasy.
  2. Process until creamy: Add the pistachios to a high-powered food processor. Pulse to chop, then blend continuously. First, it’ll turn into crumbs, then a thick clump, then magically smooth out into a paste.
  3. Scrape and blend: Pause to scrape down the sides as needed. Keep going until it becomes silky and spreadable, this can take up to 10 minutes depending on your machine. Patience is key!
  4. Adjust texture (if needed): If your paste is too thick or dry, drizzle in 1–2 teaspoons of oil. Blend again until smooth. You want it thick but spoonable, like nut butter.
  5. Cool and store: Let the paste cool down before transferring to a clean jar. Store in the fridge for up to 2 weeks, or freeze for longer storage.

  • Color tip: For a brighter green paste, look for Sicilian or high-quality pistachios with vibrant color and avoid using skins if they’re very brown.
