These soft pretzel bites are everything I want in a snack, salty, soft, and totally addicting! You get that signature chewy crust (thanks to the baking soda bath), a fluffy center, and a hit of coarse salt on top. Oh, and the cheese dip?! Let’s just say it’s not optional in this house!

I love that the dough is simple and forgiving. It rises quickly, rolls out easily, and turns into perfect little pillows that you can bake fresh anytime. These are GREAT for parties, movie nights, game day, or just when you’re craving mall-style pretzels but don’t want to go anywhere (relatable).

Once you make a batch, you’ll be hooked and if you’re serving them warm with that creamy cheese sauce?! Forget it. GONE in minutes!

Why You’ll Love These Pretzel Bites

  • You ONLY need basic pantry ingredients (plus baking soda, which you probably already have hiding somewhere)
  • They bake up golden, chewy, and soft, just like those mall pretzels we all secretly miss
  • That baking soda bath? Super easy, and what gives you that signature pretzel crust
  • Serve them with cheese dip, honey mustard, or even cinnamon sugar, they’re totally customizable
  • You can make them ahead, freeze them, and reheat in the oven for instant snack happiness
  • WAY more fun than store-bought and honestly, better tasting too!
  • Perfect for game day, movie night, or just when you’re craving something warm, salty, and homemade

How to Make Soft Pretzel Bites

Step 1:

In a large bowl, mix the warm water, yeast, and brown sugar. Let it sit for 5 minutes until it looks foamy on top (this means the yeast is alive and ready). Stir in the salt, melted butter, and 3 cups of the flour. Add the last cup a little at a time until a soft dough forms.

Turn the dough out onto a lightly floured surface and knead for about 5 to 7 minutes, until smooth and stretchy. If it’s super sticky, sprinkle on a little more flour as you go.

Step 2:

Place the dough in a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm spot for 45–60 minutes, it should DOUBLE in size. (This is a great time to prep the cheese dip or queue up your favorite playlist!)

Once the dough is almost ready, bring 9 cups of water and the baking soda to a low boil in a large pot. Stir until the baking soda dissolves. Reduce the heat and keep it warm while you shape the dough!

Punch the dough down and divide it into 6 pieces. Roll EACH one into a rope (about 14–16 inches long), then cut into 1 to 1.5-inch bite-sized pieces. They don’t have to be perfect, rustic is part of the charm.

Step 3:

Drop a few pretzel bites into the warm baking soda water and let them sit for about 20 seconds. Use a slotted spoon to scoop them out and place on a parchment-lined baking sheet. This step gives them that deep golden color and chewy outside, don’t SKIPT it!

Once they’re all on the tray, brush the tops with beaten egg and sprinkle with coarse salt. Be generous, it’s what gives them that classic pretzel taste.

Step 4:

Bake at 425°F (220°C) for 12–15 minutes, or until they’re deep golden brown and smell amazing. Try NOT to eat one straight from the oven!

Serve warm with your favorite dip. Cheese sauce is the classic, but mustard works too… You can even toss a batch in melted butter and cinnamon sugar for a sweet version.

How to Store & Reheat

  • Room temperature:
If you plan to eat them within a day, store the pretzel bites in an airtight container at room temp. They’ll stay soft for about 24 hours, but they’re best on the same day you bake them!
  • Fridge:
Want to keep them a bit longer? POP them in the fridge (still in an airtight container) and they’ll stay good for up to 3–4 days. Just reheat before serving, they firm up a little when cold.
  • Freezer:
YES, you can freeze them! Let the pretzel bites cool completely, then transfer them to a freezer-safe bag or container. They’ll stay fresh for up to 2 months. To reheat, pop them in the oven at 350°F for about 6–8 minutes, or until warm and soft again!
  • Reheating tips:
Avoid the microwave if you can… it softens the outside too much! For the best texture, reheat in the oven or an air fryer to bring back that chewy-crusty magic.

And that’s it! Soft pretzel bites made from scratch, chewy, golden, salty little bites of joy! Honestly, once you see how easy they are, you’ll want to make them for every party, game night, or random Tuesday snack craving. (And don’t skip the cheese dip… TRUST ME!)
