Easy Taco Soup

This is truly the BEST Taco Soup! Made with ground beef, black beans, corn, and colorful peppers, it’s hearty, cozy, and packed with flavor in every bite. The broth has just the right amount of spice: rich, tomatoey, and a little smoky from the taco seasoning, the kind that makes you keep going back for just one more spoonful!

And the best part?! It all comes together in ONE pot in about 30 minutes. Seriously. It’s the easiest way to get that Tex-Mex comfort you love, without the mess (or the pile of taco shells on the counter). Great for weeknights, game days, or anytime you need something warm and satisfying that everyone will love.

What You Should Know

  • Taste: Think taco night… but cozier! Every spoonful is loaded with bold, zesty flavor, tender beef, sweet corn, smoky taco seasoning, and just enough spice to make you smile. It’s hearty, savory, and seriously comforting!!
  • Texture: Chunky, a little brothy, and full of good stuff. You’ll get bites of beans and veggies in every spoonful… it’s not too thick, not too thin, just that perfect balance that keeps you going back for another scoop.
  • Skill Level: So EASY, you’ll be shocked. If you can brown meat and stir a pot, you’ve got this. It’s one of those “dump, stir, simmer, done” kinds of dinners we all need sometimes!
  • Oliver’s Tip: Add a spoonful of tomato paste when you stir in the seasoning, trust me, it gives the broth that deep red color and makes it taste like you’ve been slow-cooking it all day (even though it’s on the table in 30 minutes).
  • Serving Ideas: Grab your ladle and fill up big bowls! Top it with crushed tortilla chips, shredded cheese, maybe a dollop of sour cream. And don’t forget a squeeze of lime… it wakes everything up!
  • Bonus: It’s even BETTER the next day. The flavors get deeper, the broth thickens up just a bit, and suddenly lunch tastes like you planned it that way all along.

How to Make Easy Taco Soup

  1. Brown the beef.
Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook until it’s nicely browned, breaking it up as you go. Drain off any extra grease so the soup stays light, not oily.
  2. Add the veggies.
Toss in your diced onion, garlic, and both bell peppers. Cook for about 4–5 minutes, stirring often, until everything softens and smells amazing. This is when the kitchen starts to smell like dinner!
  3. Season it up.
Sprinkle in the taco seasoning and smoked paprika, then stir for about 30 seconds. This little step BLOOMS the spices, they wake up and get all toasty and fragrant… total flavor booster!
  4. Build the soup.
Stir in the diced tomatoes, tomato paste, black beans, corn, and beef broth. Mix it all together and bring to a gentle boil. Then reduce the heat and let it simmer for around 20 minutes, uncovered. The flavors melt together beautifully during this time.
  5. Taste and adjust.
Give it a quick taste… add salt and pepper if needed. Want it thicker? Just let it simmer a bit longer, or mash a few beans against the side of the pot with your spoon. Works every time!
  6. Serve and garnish.
Spoon the soup into bowls and top with chopped parsley (or cilantro), a squeeze of lime, and crushed tortilla chips for crunch. Add cheese or sour cream if that’s how you roll… it’s taco soup night, have fun with it!

How to Store

  • Let it cool first. Don’t rush it! Give the soup a little time to cool off before putting it away. If it’s too hot, you’ll get extra condensation and the texture can go a bit off.
  • Fridge: Pour the cooled soup into an airtight container and pop it in the fridge. It’ll stay fresh for about 4 to 5 days, and honestly, the flavor just gets better as it sits 😋
  • Reheat it:
Warm it gently on the stove over low heat, stirring every so often. If it’s looking a little thick, splash in a bit of broth or water until it’s just how you like it. Quick microwave reheats work fine too, just stir halfway through so it warms evenly.
  • Freezer-friendly: YEP, this soup freezes beautifully! Once cooled, ladle it into freezer-safe containers or bags (leave a little space for expansion) and freeze for up to 3 months. When you’re ready to enjoy it again, thaw overnight in the fridge, then reheat slowly on the stove.

I really hope you LOVE this Taco Soup as much as my family does! It’s one of those recipes that’s easy enough for a weeknight, but cozy enough that it still feels special. Every time I make it, the whole kitchen smells like taco night… and honestly, nobody ever complains about that!
