Lentil loaf is one of those meatless mains that somehow manages to be cozy, filling, and still crowd-pleasing which makes it perfect for the holidays! There are plenty of plant-based loaf recipes out there, but this one’s my GO-TO. It’s flavorful, sturdy enough to slice, and topped with a glossy glaze that gets just the right amount of sticky in the oven.

The texture is spot-on thanks to a combo of mashed lentils, rolled oats, and seeds, no mushy loaf here… And that glaze?! It’s got a balance of sweet and tangy that really pulls the whole thing together. Serve it with mashed potatoes, roasted carrots, or whatever else is on your Christmas table, this loaf fits right in!

Ingredients

For the Lentil Loaf:

  • 1 tbsp olive oil – For sautéing the aromatics
  • 1 small onion, finely chopped – Adds flavor and moisture
  • 2 garlic cloves, minced – You can add a third if you love garlic
  • 1 cup shredded carrot (or sweet potato) – Brings sweetness and a bit of structure
  • 2 cups cooked brown or green lentils – Make sure they’re well-drained and not too soft
  • ¾ cup rolled oats – Helps bind everything together
  • ½ cup sunflower seeds (or chopped walnuts) – Adds texture and a little crunch
  • ¼ cup tomato paste – For umami depth and moisture
  • 1 tbsp ground flaxseed – Acts as a binder
  • 2 tbsp soy sauce or tamari – Adds saltiness and savory flavor
  • 1 tbsp balsamic vinegar – Brightens things up
  • 1 tsp smoked paprika – Adds warmth and a subtle smoky note
  • ½ tsp dried thyme – For a cozy, holiday-herb touch
  • ½ tsp salt + black pepper to taste

For the Glaze:

  • ⅓ cup ketchup – The base of that sticky-sweet topping
  • 1 tbsp maple syrup – Adds sweetness and helps with caramelization
  • 1 tsp balsamic vinegar – Balances the sweetness
  • Optional: pinch of smoked paprika or Dijon mustard for extra flavor

How to Make Festive Vegan Lentil Loaf

1. Preheat and prep your pan

Preheat your oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides so you can lift it out easily later… Trust me that little trick makes slicing and serving way cleaner.

2. Sauté your aromatics

Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook for about 3 to 4 minutes, until it starts to soften. Stir in the garlic and shredded carrot and cook for another 2 to 3 minutes, just until everything smells great and the carrot begins to soften.

Remove the pan from heat and let the mixture cool slightly WHILE you move on to the next step.

3. Mash the lentils

In a large mixing bowl, add your cooked brown or green lentils. Use a potato masher or fork to mash about half of them. You want a mix of textures here, some mash for binding, some whole for that hearty bite!

4. Mix everything together

To the bowl of lentils, add your sautéed veggies, oats, seeds, tomato paste, flaxseed, soy sauce, balsamic vinegar, smoked paprika, thyme, salt, and pepper. Stir really well until everything is fully combined.

The mixture should be thick and hold together when you press it with a spoon.

  • If it feels too wet, add a tablespoon or two of oats.
  • If it’s too dry, splash in a little veggie broth or water until it comes together.

5. Pack and glaze

Scoop the mixture into your prepared loaf pan and press it down firmly with the back of a spoon or spatula. Smooth the top as much as you can, this helps the glaze go on evenly.

In a small bowl, whisk together all the glaze ingredients, then spread the glaze over the top of the loaf. Be generous, THIS is the part that gets sticky and golden in the oven!

6. Bake

Bake for 40 to 45 minutes, or until the edges look firm and the top is set. You’ll see the glaze darken and get a little glossy, that’s how you know it’s doing its thing.

Let the loaf cool in the pan for 10 to 15 minutes before removing. This step matters! It helps the loaf firm up and slice cleanly…

7. Slice and serve

Use the parchment to lift the loaf out, then slice with a sharp knife. Garnish with chopped parsley or fresh thyme if you like.

Serve warm with mashed potatoes, gravy, cranberry sauce, or all of the above! It’s a HOLIDAY meal after all!

Tips for Success

  • Mash only half the lentils. This keeps the loaf from turning into mush. The mashed lentils help bind it, while the whole ones give it texture and structure.
  • Don’t skip the sauté. Cooking the onion, garlic, and carrot before mixing adds way more flavor and helps everything hold together better once baked.
  • Use parchment paper. Lining the loaf pan with parchment makes it super easy to lift the loaf out in one piece. It also prevents sticking and helps with cleaner slices.
  • Pack the loaf firmly. Press the mixture into the pan nice and tight, no air pockets! This helps the loaf hold together once sliced.
  • Let it rest before slicing. After baking, let the loaf sit in the pan for 10–15 minutes. This helps it firm up so it doesn’t fall apart when you cut into it!

Proper Storage

  • Make ahead: You can prep this lentil loaf mixture up to 1 day in advance. Just form it in the loaf pan, cover it with plastic wrap, and refrigerate. Let it come to room temperature before baking, then glaze and bake.
  • Storing leftovers: Once fully cooled, wrap leftover slices tightly in foil or place them in an airtight container. Store in the fridge for 3 to 4 days.
  • Can you freeze it? YES, this lentil loaf freezes well either baked or unbaked. Wrap tightly in plastic wrap, then in foil, and freeze for up to 2 months. If freezing unbaked, thaw overnight in the fridge before baking. If freezing cooked slices, thaw and reheat as needed…
  • How to reheat: To keep leftovers from drying out, reheat slices in a covered dish in the oven at 300°F (150°C) for about 15–20 minutes. You can also microwave individual slices in 30-second bursts until warmed through.
