Step 1

Preheat your oven to 350°F (175°C) and butter a 9-inch round or oval baking dish. Go for something deep, this bake puffs up as it cooks, and we want to give it room to rise!

Step 2

In a big bowl, whisk the eggs and sugar until light and frothy… about 30 seconds is all it takes! Then stir in the cottage cheese, sour cream, vanilla, lemon zest, and salt. It won’t look perfectly smooth (those cottage cheese curds are supposed to be there!), so don’t stress.

Once that’s all mixed, sprinkle in the flour and stir again until everything’s combined.

Step 3

Fold in the chopped strawberries and red currants. If you want it to look extra pretty, save a handful of berries to scatter on top later, they’ll peek through the golden crust once it’s baked.

Step 4

Pour the batter into your buttered dish and spread it out evenly. Give the dish a little shake to level the top, then gently add those extra berries if you saved some.

✔️ Check for doneness. The top should be puffed and golden, and the center should no longer jiggle. A toothpick inserted near the middle should come out clean OR with just a bit of soft crumb!

✔️ Let it cool before slicing. The bake needs 10–15 minutes to set properly. Cutting too soon will make it fall apart (and nobody wants a soupy slice!).

✔️ Frozen berries work too. If using frozen currants or strawberries, toss them in straight from the freezer. No need to thaw, just fold them in gently and bake as usual.
