The whole thing comes together in about 30 minutes, and it’s perfect for meal prep, light dinners, or easy lunches that don’t feel like sad leftovers… We’ve been making this one on repeat, and honestly, it never gets old!

Ingredients
For the turkey meatballs
- 1 lb (450 g) ground turkey
- 1 large egg
- 1 small onion, grated
- 2 garlic cloves, minced
- ¼ cup almond flour
- 2 tbsp chopped fresh oregano (or 1 tsp dried)
- 1 tbsp chopped fresh mint
- ¾ tsp fine sea salt
- ½ tsp black pepper
- 1 tbsp olive oil (for brushing or spraying)
For the lemon-herb cauliflower rice
- 1 tbsp olive oil
- 1 medium head cauliflower, riced (or 1 bag pre-riced cauliflower, about 24 oz)
- 1 garlic clove, minced
- Zest of 1 lemon
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley or mint
- ½ tsp salt
- ¼ tsp black pepper
For the toppings
- 1 cup cherry tomatoes, halved
- 1½ cups cucumber, thinly sliced
- 1 cup shredded red cabbage
- Fresh mint or oregano leaves, for garnish
- Flaky sea salt and freshly cracked black pepper, to finish
- Extra-virgin olive oil, for drizzling
How to Make Low Carb Turkey Meatball Bowls

1. Preheat the oven. Set your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly brush or spray with olive oil so the meatballs don’t stick.
2. Mix the meatballs. In a large bowl, combine the ground turkey, egg, grated onion, garlic, almond flour, oregano, mint, salt, and pepper. Use a fork or your hands to gently mix just until combined, don’t overmix or the meatballs can get tough.
3. Shape and bake. With slightly wet hands, form 20 small meatballs (about 1 heaping tablespoon each). Space them evenly on the baking sheet. Brush or mist the tops with olive oil. Bake for 12–14 minutes, or until cooked through (165°F internal temp). For a little browning, switch to broil for 1–2 minutes at the end.
4. Make the cauliflower rice. While the meatballs bake, heat olive oil in a large skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant, DON’T let it brown. Stir in the cauliflower rice, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, just until tender.
5. Add the flavor. Turn off the heat and stir in the lemon zest, lemon juice, and chopped herbs. Taste and adjust seasoning if needed, this is where the cauliflower rice comes ALIVE!
6. Assemble your bowls. Divide the cauliflower rice into bowls or meal prep containers. Add 5 meatballs per portion, then layer in cucumber slices, cherry tomatoes, and shredded red cabbage.
7. Finish and serve. Top with fresh mint or oregano leaves, a sprinkle of flaky sea salt, and some cracked black pepper. Just before serving (or sealing), drizzle lightly with olive oil for extra flavor.
Storage Tips
- Let everything cool before storing. Packing warm food into containers can make things soggy, especially the veggies, so give it a few minutes first.
- Use airtight containers. These bowls hold up great in the fridge for up to 4 days if stored properly.
- Keep the fresh stuff fresh. If you’re meal prepping, store the meatballs and cauliflower rice together, but add the cucumbers and cabbage the day you eat. That way, they stay CRISP.
- Reheat gently. Just microwave the meatballs and rice for about a minute, then toss on your cold toppings and a little drizzle of olive oil.
- Want to freeze the meatballs? Totally fine! Let them cool, then freeze in a single layer before transferring to a freezer bag. They’ll last up to 2 months.
- Skip freezing the cauliflower rice. It’s best fresh. Freezing it can make it mushy and sad…
