Casseroles and high-protein meals are two of my favorite dinner things, so any recipe that brings them together is already starting strong in my house!

I mean, what’s not to love? You get a big warm dish that can feed a family of four, usually without making a mountain of pans in the sink.
These casseroles all have 35g+ protein per serving, so they are filling enough to keep everyone satisfied, which is exactly what I want when the kids are hungry.
The leftovers are a big win too. A good casserole can turn into an easy lunch the next day, especially if you need something to pack for work or reheat quickly between all the usual weekday chaos. Pretty nice, right? Haha.
Start with the one that sounds easiest tonight. Leftovers are just a bonus!
1) Teriyaki Chicken Casserole by All Nutritious

Today we are starting with teriyaki chicken, with that sweet-savory chicken that already conquered my family, haha. The prep is short and then the oven takes over. Add some extra broccoli if your family will allow it (mine negotiates, hard!), and you’ve got a full dinner in one dish.

2) Poppy Seed Chicken by Budget Bytes

It’s not fancy, but that’s exactly why I like it! Creamy chicken, buttery cracker topping, a little crunch on top… it tastes like the kind of dinner somebody made because they knew people were hungry. The budget-friendly part helps too.
I make casseroles like this on Sunday, then I pack the leftovers for the next Monday. You should try it!

3) Chicken & Butter Bean Cassoulet by HelloFresh

The chicken and butter beans make it extra filling, but the crispy parmesan breadcrumbs are really the best part. That crunchy top is doing important work. And 55 grams of protein is no joke!

4) Chicken Cauliflower Casserole by Wholesome Yum

My low carb casserole guys, save this one!
Chicken, cauliflower, pesto, cream, and mozzarella make it rich and comforting without even needing pasta or rice. And if you use rotisserie chicken it gets even easier. Add a salad on the side if you’re feeling it and you’re done under 45min.

5) Chicken Tortilla Casserole by Well Plated

Enchilada flavor without rolling tortillas one by one? Yep, bring it on. Layers of chicken, tortillas, sauce, peppers, and cheese bake into a messy, scoopable dinner that feels made for a hungry table. My kiddos love when toppings are involved, so I put out salsa, avocado, lettuce, or Greek yogurt and let everyone finish their own plate. Funny how dinner gets easier when people feel like they built it themselves.
