  • 1 tsp (5 ml) olive oil
  • ½ tsp (3 g) kosher salt
  • ¼ tsp (1 g) freshly cracked black pepper
  • 1 tsp (1 g) fresh thyme leaves

1. Prep the carrots and the oven

Start by preheating your oven to 425°F (220°C). This high heat is what gives the carrots those deeply roasted, caramelized edges… don’t go lower or they’ll turn soft without that beautiful color.

Peel the carrots and slice them on a sharp diagonal into thick chunks. Try to keep the pieces similar in size so they roast evenly. If they’re wildly uneven, you’ll end up with some too soft and some not quite done (and nobody wants that)!

Line your baking dish or sheet pan with parchment paper! The honey glaze will get sticky as it roasts, and parchment makes cleanup SO much easier.

2. Make the glaze
