This is one of those easy chicken dinners I make on repeat! It’s quick, it’s simple, and it always hits the spot. You’ve got juicy lemon-seasoned chicken, couscous that cooks in five minutes, and some fresh veggies on top to keep things crisp and light!

It’s light but still filling, fresh but still cozy… My kids LOVE it, I love it, and it actually keeps well in the fridge (which is a win for next-day lunches if you’re lucky enough to have leftovers)!

How to Make Lemon Herb Chicken Couscous Bowls
Step 1: Season the chicken
Place two boneless, skinless chicken breasts in a small baking dish. Drizzle them with olive oil and squeeze over the juice of half a lemon, just enough to coat them nicely without flooding the pan!
Sprinkle with dried oregano, a little minced garlic (if you like), salt, and plenty of black pepper. Use a fork or your hands to gently rub everything in so the chicken’s well coated…
No need to marinate for hours, but if you’ve got an extra 10–15 minutes while you prep the other stuff, letting it sit in the seasoning makes a noticeable difference!
Step 2: Bake the chicken
Preheat your oven to 375°F (190°C). Slide the dish into the oven and bake for 20 to 25 minutes, depending on the size of the chicken breasts. You’re aiming for juicy and just cooked through, the internal temp should hit 165°F.
Once it’s done, set it aside to rest. That little break HELPS the juices stay in the chicken instead of running out all over your cutting board.
Step 3: Cook the couscous
While the chicken’s in the oven, bring a kettle or small pot of water to a boil. In a heatproof bowl, add 1 cup of dry couscous, a pinch of salt, and a drizzle of olive oil. Pour in 1 cup of boiling water, give it a quick stir, then cover tightly with a plate or lid.
Let it steam for 5 minutes, don’t peek. Once time’s up, uncover and fluff it with a fork. That’s it! No draining, no stovetop, no fuss.
Step 4: Chop the veggies

- Fridge: Keep the couscous and chicken stored together in an airtight container, and stash the chopped veggies in a separate one. Everything stays fresh for up to 4 days, just reheat the chicken and couscous, then ADD the veggies right before eating! The crunch stays intact and the flavors stay bright!
- Freezer (chicken only): You can totally freeze the cooked chicken by itself… Just slice it and store it in a freezer-safe bag or container, it’ll keep well for up to 2 months. Thaw overnight in the fridge and reheat before serving. I don’t recommend freezing the couscous or fresh toppings, they just don’t bounce back the same!
- Meal prep tip: These bowls are awesome FOR make-ahead lunches! Just keep the wet and crunchy stuff (like cucumber and radish) separate until you’re ready to eat, so nothing gets soggy. Works great for lunchboxes or fridge-foraging!
