This soup is kind of like if a classic creamy cauliflower soup and a loaded baked potato soup had a very elegant baby. It’s smooth, buttery, and cozy, but it also has a little something EXTRA going on!

Instead of boiling the cauliflower, we roast it until golden and caramelized… That simple switch makes a HUGE difference in flavor, it adds a rich, slightly nutty depth that takes this soup from “just okay” to “make this again tomorrow.” Then we blend it up with a bit of sautéed onion and garlic, some soft Yukon gold potatoes for body, and a splash of cream to tie it all together!
But the real fun it’s in the toppings. A swirl of crème fraîche, crispy cheddar or Parmesan bits, fresh parsley, and a little pinch of smoked paprika. It’s creamy, crunchy, and honestly kind of fancy without trying too hard. We just call it dinner… and it’s DELICIOUS!
Helpful Tips & Variations
- Roast the cauliflower for deeper flavor. Roasting brings out a nutty, slightly sweet FLAVOR that you just don’t get from boiling. It’s the secret to that rich, golden color and cozy taste!
- Don’t rush the blending. Use a high-speed blender or an immersion blender and take your time, the smoother the soup, the more luxurious it’ll feel…
- Add umami with miso or Parmesan. A spoonful of white miso paste or a handful of grated Parmesan melts right in and gives the soup a savory boost. Totally optional, but highly recommended!
- Use crème fraîche or a swap you love. Sour cream, Greek yogurt, or a drizzle of heavy cream all work great here. That creamy swirl on top adds richness and contrast.
- Make cheese crisps or buy them. Bake thin piles of shredded cheddar or Parmesan until golden and crisp, then crumble over each bowl. Or GRAB a bag of cheese crisps and call it a day!
- Want it dairy-free? Use olive oil instead of butter and skip the cream topping, or try a swirl of cashew cream or plain oat milk yogurt.
- Freezer-friendly! This soup keeps well in the freezer for up to 3 months. Let it cool, portion it out, and reheat gently on the stove.

Ingredients Needed
This cozy cauliflower soup is made with just a few basic ingredients, but the flavors are rich, creamy, and comforting.
(Scroll down for the full printable recipe card with amounts.)
- Cauliflower – One medium head, chopped into florets. Roasting it brings out a rich, nutty flavor.
- Potato – A small Yukon gold or similar variety adds natural creaminess and body.
- Onion – For sweetness and depth in the base.
- Garlic – Because every good soup starts with garlic!
- Olive oil or butter – To roast the cauliflower and sauté the aromatics.
- Vegetable broth – The liquid base. Chicken broth works too if you don’t need it vegetarian.
- Salt & white pepper – For seasoning. White pepper keeps the soup color light, but black pepper works too.
- Heavy cream – Just a splash at the end for extra richness.
- Crème fraîche – Adds tang and creaminess when swirled on top. Sour cream or Greek yogurt also work.
- Cheddar or Parmesan crisps – Crushed on top for a savory crunch.
- Fresh parsley – Chopped and sprinkled over for a pop of color and freshness.
- Smoked paprika – A small pinch for color and a hint of warmth (optional, but lovely).
How to Make Roasted Cauliflower Soup

1. Roast the cauliflower
Preheat your oven to 425°F. Spread the cauliflower florets out on a large baking sheet (don’t overcrowd them or they’ll steam instead of roast). Drizzle with 1 ½ tablespoons olive oil and ½ teaspoon salt, then toss until everything’s evenly coated.
Roast for 25 to 30 minutes, flipping once halfway through. You want GOLDEN brown edges and soft centers. A little char is totally fine, that’s what gives the soup its nutty, caramelized flavor and that beautiful warm color!
2. Sauté the aromatics
While the cauliflower roasts, heat 1 tablespoon olive oil or butter in a large soup pot over medium heat.
Add the chopped onion and cook for about 6 to 8 minutes, stirring occasionally, until soft and slightly golden. Add the garlic and cook for 1 more minute, just until fragrant. (Don’t let it brown, garlic can turn bitter quickly.)
3. Add the broth and potatoes
Stir in the potato chunks, then pour in 4 cups vegetable broth and add a little more salt if needed. Bring everything to a gentle boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are soft and easy to mash…
4. Blend until smooth
Add the roasted cauliflower to the pot. Use an immersion blender to puree the soup right in the pot, or carefully transfer it to a high-speed blender in batches. BLEND until silky smooth.
Stir in a splash of heavy cream (start with ¼ cup and add more if you like it extra rich). Taste and adjust seasoning with more salt and white pepper if needed!
5. Garnish and serve
Ladle the soup into bowls. Add a generous spoonful of crème fraîche, sprinkle with crushed cheese crisps, and finish with chopped parsley and a pinch of smoked paprika.
Serve warm, with crusty bread or a grilled cheese if you’re going all in. SO GOOD!

Proper Storage
- Storing leftovers. You can keep leftover soup in the fridge for up to 4 days. Just let it cool down a bit first, then store it in an airtight container. EASY.
- Reheat. Warm it up in the microwave or on the stove, both work fine. If using the stovetop, go low and slow, and stir it often so nothing sticks or scorches.
- Can you freeze it? Yes, and it freezes really well! Let the soup cool completely, then transfer it to freezer-safe containers. It’ll keep for up to 3 months. Thaw in the fridge overnight and reheat gently on the stove. You might need to add a splash of broth or water to loosen it up, it thickens as it sits…
Can this soup be made in a slow cooker?
Not really… Since the cauliflower gets roasted first, the slow cooker isn’t the best fit for this recipe! That caramelized flavor from the oven is what gives the soup its rich, toasty taste, and you just can’t get the same result in a crockpot.
What to Serve With Roasted Cauliflower Soup
This creamy soup is filling on its own, but we definitely recommend something on the side to turn it into a full meal. A slice of crusty sourdough or toasted baguette is PERFECT for dunking (extra points if it’s garlic bread)!
Grilled cheese is always a hit too, something sharp like white cheddar or gruyère pairs really well with the smooth, mellow soup. You could also serve it with a simple green salad or even roasted chickpeas for a little protein crunch on the side.
And don’t forget the toppings! The crème fraîche, cheese crisps, and parsley add so much texture and flavor, don’t skip ’em!
I really hope you get a chance to try this one, it’s cozy, creamy, and just SO good! We make it all the time around here, especially when we want something warm and filling without a lot of fuss.
