If you’ve ever wanted a vegetarian dinner that’s filling, balanced, and doesn’t require a TON of ingredients, this one’s for you. We kept it simple on purpose, just a handful of pantry staples, no fancy steps, and it still comes out tasting like something you’d serve on a Sunday!

It bakes up warm and satisfying, holds its shape when sliced, and it’s easy to make ahead. Whether you’re cooking for a crowd or just want a meatless dinner that actually feels like dinner, this recipe delivers every time.

Helpful Tips & Variations

  • Use leftover mashed potatoes if you have them! Just warm them up a bit so they’re easy to mix with the cottage cheese and cheese.
  • Blend your cottage cheese if you want a super smooth topping. It’s not required, but it gives the mashed potatoes an extra creamy texture without using butter or cream…
  • Don’t skip the cheddar on top. It helps the pie brown beautifully in the oven and adds that melty, savory finish.
  • Use what you have in the pantry. Black beans, kidney beans, cannellini, they ALL work! Same goes for frozen veggies… No corn? Add carrots or green beans instead.
  • Make it ahead. You can assemble the whole thing a day in advance, cover, and refrigerate. Just bake it when you’re ready, add 5–10 extra minutes if it’s coming straight from the fridge.
  • Want it spicier? Add a pinch of chili flakes or a splash of hot sauce to the filling.
  • Want to make it vegan? Use dairy-free mashed potatoes, swap the cottage cheese for a vegan alternative or mashed white beans, and use plant-based shredded cheese (or skip the cheese entirely).

How to Make Vegetarian Cottage Cheese Shepherd’s Pie

Vegetarian Cottage Cheese Shepherd’s Pie

1. Preheat your oven

Set your oven to 200°C (400°F). Lightly grease an 8×8-inch baking dish or something similar and set it aside.

2. Cook the filling

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and lightly golden, about 4–5 minutes… Add the garlic and cook for 1 minute more.

STIR in the beans, corn, peas, smoked paprika (if using), and a pinch of salt and pepper.

Cook for another 3–4 minutes, just until everything is heated through and well combined. Spoon the filling into the prepared baking dish and spread it out evenly!

3. Make the mashed potato topping

In a mixing bowl, stir together the warm mashed potatoes, cottage cheese, and shredded cheddar until creamy and smooth. If your cottage cheese is on the CHUNKY side, you can blend it first or mash it a bit with a fork. Taste and season with salt if needed!

4. Assemble and top with cheese

Spread the potato mixture over the filling, smoothing it all the way to the edges with a spatula. Sprinkle a little extra cheddar cheese on top, it helps it bake up golden and bubbly.

5. Bake

Place the dish in the oven and bake for 20–25 minutes, or until the top is golden and the filling is hot and bubbling around the edges.

6. Let it rest, then serve

Let the pie sit for about 5–10 minutes before slicing. It’ll firm up a bit as it cools, which makes it EASIER to serve!

How to Store

  • In the fridge:
Let it cool down first, then cover the dish or scoop leftovers into a container with a lid. It’ll keep in the fridge for up to 4 days. You can reheat it in the microwave for quick leftovers, or pop it back in the oven at 180°C (350°F) until it’s warmed through.
  • In the freezer:
Yep, this one freezes really WELL! Just let it cool completely, wrap it tightly (or use a freezer-safe container), and freeze for up to 2 months. When you’re ready to eat, you can thaw it overnight in the fridge and reheat the whole dish in the oven at 180°C (350°F) for about 20–30 minutes. Or just microwave individual portions for a couple of minutes, super easy either way!
  • Want to prep ahead?
You can assemble the whole thing and stash it in the fridge (unbaked) for up to 24 hours. Just bake it when you’re ready, add about 5–10 extra minutes to the cook time if it’s going in cold.

I really hope you LOVE this recipe as much as we do around here! It’s one of those dinners that’s simple, satisfying, and somehow still feels special, especially with that golden cheesy top.
