So here’s the funny thing, these weren’t supposed to be donuts at all. We started off testing a gingerbread dough that just… wouldn’t behave (too soft, too sticky, you know the type)!

1. Mix the dry ingredients.

2. Add the wet ingredients.
In another small bowl, mix the egg, melted butter, honey, milk and vanilla. Pour it over the dry mix and stir gently with a spatula or spoon until the dough starts to come together. It should feel soft and slightly tacky, not sticky.

If it’s too wet, add a spoonful of flour, if too dry, splash in a bit more milk.

3. Shape the dough.
Scoop about a tablespoon of dough and roll into small balls. You can dust your hands with a little flour to keep things from sticking. Place the dough balls on a piece of parchment paper cut to fit your air fryer basket.

How to Store

If you somehow end up with leftovers (which honestly doesn’t happen often around here…), here’s how to keep them fresh.

  • Room temperature: Store the donut bites in an airtight container for up to 2 days. They’ll stay soft and sweet, though the sugar coating might lose a little of its sparkle.
  • To reheat: Pop them back into the air fryer at 320°F (160°C) for 2–3 minutes, they’ll taste freshly made again, warm and slightly crisp on the outside!
  • Freezing: You can freeze them (without the sugar coating) for up to 2 months. When you’re ready, thaw at room temp and reheat before rolling in cinnamon sugar. A quick warm-up and a fresh dusting of sugar BRING them right back to life, just like they were on day one!
