  • Flour. Just regular all-purpose flour, we only need a few spoonfuls to give the brownie structure. I haven’t tested it with gluten-free flour yet, but a 1:1 swap should work fine!
  • Cocoa powder. Use unsweetened, 100% cocoa powder for the best flavor. This is what gives the brownie its deep, chocolatey taste.
  • Brown sugar. Adds richness and a hint of molasses flavor. You could use white sugar in a pinch, but I really love the warm depth the brown sugar gives.
  • Honey. This is what makes it feel extra cozy, it sweetens the batter AND melts into the gooey center! A drizzle on top at the end is non-negotiable if you ask me.
  • Butter. Melted butter keeps things tender and rich. You can sub with oil, but you’ll lose that buttery taste (and I’m a big fan of that buttery taste).
  • Milk. Just a splash to help bring the batter together. Use whatever you have, whole, low-fat, non-dairy, even cream if you’re feeling extra…
  • Egg yolk. Just the yolk! It helps bind everything without making the texture too cakey or dry.
  • Cinnamon. Just a small pinch adds warmth without taking over the chocolate.
  • Salt. Just a pinch, it balances the sweetness and brings out the chocolate flavor.
  • Baking powder. A little lift helps the brownie puff up without turning into a full-on cake. You still want that soft, rich texture.
  • Chocolate chips (or chopped chocolate). This is your molten center! Don’t SKIPT IT. It melts into a pocket of joy right in the middle.
  • Extra honey. For drizzling at the end. It caramelizes slightly from the heat and takes the whole thing to another level.

Use a large microwave-safe mug, at least 12 to 14 ounces. Smaller mugs can overflow, and microwave times may vary depending on wattage, so start checking early.

  2. Add the chocolate center.
    Spoon half of the batter into a microwave-safe mug that holds at least 12 to 14 ounces. Add the chocolate chips or chopped chocolate to the center, then cover with the remaining batter. Make sure the mug is no more than two-thirds full so it has room to rise.

  1. Microwave.
    Microwave for 35 to 40 seconds, then continue in 5 to 10 second bursts only if needed, until the top looks just set and the center is still slightly soft. Microwave times can vary a lot, so it’s better to check early than overcook it.
  2. Finish and serve.
    Let the mug brownie rest for 1 minute. Drizzle with a little extra honey on top if you like, then enjoy while warm.

Can I skip the egg yolk?

You can… BUT the texture won’t be quite the same! The egg yolk helps make it softer and more tender.

What kind of chocolate works best for the center?

Chocolate chips, chopped chocolate or even a square of your favorite bar, anything that melts nicely! I’ve even used a spoonful of Nutella in a pinch (highly recommend)!
